Apples Offer Variety
Georgia apples can be en
joyed year round if they are
preserved at the peak of the
season. Whether canned, fro
zen or dried, apples are a
welcome addition to family
meals anytime.
When selecting apples for
preserving, choose those
with well-developed color.
Avoid those that are too
green or overripe. Apples
may be canned as slices or
as applesauce.
To prevent darkening, dip
slices in water containing
two tablespoons each of salt
and vinegar per gallon of
water.
Another method is to soak
slices in a sodium bisulfite
solution (one teaspoon of so
dium bisulfite per gallon of
water) for two to three min
utes. This also works well for
pretreating apples for freez
ing and drying. Sodium bi
sulfite (USP grade) can be
obtained at stores selling
wine-making supplies.
To prevent molding, apple
sauce should be hot when
packed in jars. Leave Vi-inch
headspace and process pints
and quarts for at least 25
minutes in a boiling water
bath.
Applesauce also can be
frozen.
Many people like to freeze
apple slices in pie pans. The
apples are pretreated to pre
vent darkening. Sugar and
seasonings are then added.
After freezing, the apples
are slipped out of the pie pan
and packaged in moisture
vaporproof packaging for
storage. When ready to use,

place the partially-thawed
apples in a pie crust for
baking.
Apples dry well. Pretreat
with ascorbic acid, like
lemon juice, to prevent
browning and then dry in the
sun, oven or in a dehydrator
until they are pliable and
leathery. Dried apples make
excellent snacks and are
great rehydrated in pies and
sauces.
Extra apples can also be
made into apple butter or
jelly. Apple butter should be
processed in a boiling water
bath to prevent spoilage.
Apple Butter
Apple butter is an old-fash
ioned spread. Spices and
sugar are added to apple
pulp which is cooked until
thick.
Apple Butter
2 quarts apple pulp
4 cups sugar
2 teaspoons ground cinna
mon
teaspoon ground cloves
Prepare pulp by washing
apples and removing peels
and cores. Slice and add

small batches until thick.
The butter may be sim
mered on top of the stove in a
heavy kettle, cooked in the
oven (at 275 degrees) in a
shallow baking pan or
cooked in the microwave
oven.
The butter is ready when it
rounds slightly on a spoon
and has a glossiness or
sheen. Cooked butters should
be packed immediately into
hot jars, leaving V* inch head
space. Adjust lids and proc
ess in boiling water bath for
ten minutes. Butters can
also be frozen or stored for
short periods of time in the
refrigerator.
Canning Applesauce
Wash and core apples. Re
move peel, if desired. Cut
large fruit into pieces. Sim
mer until soft, adding a
small amount of water to
prevent sticking.
When apples are tender,
put them through a food mill
or strainer. Add sugar to
taste.

Reheat applesauce to sim
mering and pack hot into
jars, leaving V* inch head
space. Adjust lids and proc
ess in a boiling water bath:
ten minutes for both pints
and quarts. If the applesauce
is very thick, increase the
processing time to 20 min
utes.
Apple Jelly
(Three or four eight-ounce
glasses)
4 cups apple juice (about
three pounds apples and
three cups water)
2 tablespoons strained
lemon juice, if desired
3 cups sugar
To Prepare Juice Select
about one-fourth firm-ripe
and three-fourths fully ripe
tart apples. Sort, wash and
remove stem and blossom
ends; do not pare or core.
Cut apples into small pieces.
Add water, cover and bring
to a boil orf high heat. Re
duce heat and simmer for 20
to 25 minutes, or until apples
are soft. Extract juice by
placing fruit into a flat-bot
tomed kettle and add cold
water. For apples and other
hard fruits, add enough wa
ter ta cover. For berries and
grapes, use only enough wa
ter to prevent scorching.
Crush soft fruits to start the
flow of juice.
Bring to boil on high heat.
Stir to prevent scorching.
Reduce heat.
Grapes and berries need
ten minutes to cook soft.
