Use Your Vegetables
In A Variety Of Ways
The abundant vegetable
crops that grow in the fertile
regions of the African conti
nent play a mjor role in the
local cuisines. Many main
courses are accompanied by
four to eight different vege
table dishes.
Take advantage of fresh
vegetables by trying any of
the following imaginative
recipes inspired by African
cooking: Green Beans With
Sour Sauce, Com and To
mato Casserole and Cabbage
With Bacon.
Green Beans
With Sour Sauce
1 Mi teaspoons salt
1 pound fresh green string
beans, trimmed, washed and
left whole

V 4 cup malt vinegar
1 teaspoon light-brown sugar
y« teaspoon dry hot English
mustard
In a 3- to 4-quart saucepan,
bring 2 quarts of water and 1
teaspoon of the salt to a boil
over high heat. Drop the
beans in by the handful. Re
turn the water to a boil,
reduce the heat to moderate
and boil the beans uncovered
for 10 to 15 minutes, or until
they are tender but still firm.
Do not overcook them. Im
mediately drain the beans in
a colander and transfer
them to a large heated serv
ing bowl. Cover to keep them
warm while you prepare the
sauce.
Combine the egg, vinegar,
sugar, mustard and the re
maining Mi teaspoon of salt
in the top of a small double
boiler and beat vigorously
with a wire whisk until the
mixture is smooth. Place the
pan over simmering, not
boiling, water, and continue
to beat for 2 or 3 minutes
longer, until the sauce thick
ens lightly and clings to the
whisk. Taste for seasoning,
pour the sauce over the
beans, and serve at once.
Serves 4.

Preheat the oven to 325

butter evenly over the bot
tom and sides of a 1 %-quart

TOLL HOUSE® CAKE
2 Vt cups unsifted flour
1 V 2 measuring teaspoons
baking soda
1 measuring teaspoon salt
Mi cup butter, softened
1 Mi cups brown sugar,
firmly packed
1 measuring tablespoon
vanilla extract
2 eggs

combine the com, tomatoes,
egg, sugar, salt and a few
grindings of pepper, and toss
together gently but thor
oughly. Pour the com mix
ture into the buttered dish
and press it down with a
spatula or the back of a large
spoon until it is smooth and
compact. Sprinkle the top
with bread crumbs and then
the 3 tablespoons of butter
bits.
Bake the ingredients in the
middle of the oven for 1 hour
or until the bread crumbs
are a rich golden brown.
Serve the casserole hot, as a
vegetable course or a main
course at lunch. Serves 4 to
6.
Cabbage and Bacon
Casserole
1 IMi to 2-pound white or
1 y 4 cups milk
Mi pkg. (1 cup) Nestle’
mini-morsels
Preheat oven to 350 de
grees. In small bowl, com
bine flour, baking soda and
salt; set aside. In large bowl,
combine butter, brown sugar
and vanilla extract; beat un
til creamy. Add eggs, one at
a time, beating well after
each addition. Alternately
blend in flour mixture with
milk. Stir in Nestle’ mini
morsels. Pour into two
greased and floured 8” or 9”
round cake pans or one 10”
tube or bundt pan.
Bake at 350 degrees.
Time: 35 minutes lay
ers; 45-50 minutes bundt
or tube pan.
Cool 10 minutes; remove
from pans. Cool completely
on wire racks.
Makes: two 8” or 9” cake
layers or one 10” tube or
bundt cake.
Note: Do not test for done
ness by piercing with cake
tester for cake may lose vol
ume.

green cabbage
V* pound lean slab bacon
with rind removed, cut into
y4-inch dice
2 medium-sized tart cooking
apples, peeled, cored and
coarsely grated
1 teaspoon salt
Wash the head of cabbage
under cold running water,
then remove the tough outer
leaves and cut the cabbage
lengthwise into quarters. To
shred the cabbage, cut out
the core and slice the quar
ters crosswise into strips M»-
inch wide.
In a 3- to 4-quart saucepan,
bring 2 quarts of water to a
boil over high heat and drop
in the cabbage by the hand
ful. Bring the water to a boil,
reduce the heat to moderate,
and boil the cabbage uncov
ered for about 5 minutes or
until the shreads are limp
but barely tender. Do not
overcook them. Immedi
ately drain the cabbage in a
colander and run cold water
over it to set the color and
keep it from cooking further.
Fry the diced bacon in a
heavy 10- to 12-inch skillet
over moderate heat, stirring
it frequently with a slotted
spoon until it is crisp and has
rendered all of its fat. With a
bulb baster or large spoon
remove and discard all but a
thin film of fat from the
skillet.
Add the cabbage, apple
and salt to the reamining
bacon dice and fat, and stir
until well mixed. Cover the
ingredients tightly and cook
over low heat for about 30
minutes, or until the cab
bage is tender. Check from
time to time to make sure
that the cabbage is moist. If
it seems dry, add a table
spoon or so of boiling water.
When the cabbage is done,
there should be almost no
liquid left in the casserole.
Taste for seasoning and
serve at once from a heated
bowl or platter. Serves 6.
