Old-Fashioned Angel Cake A Classic
Old-fashioned angel cake,
once made in order to use up
left-over egg whites, is now
an American classic dessert.
Light, simple and delicious,
it is easy to make and re
quires only a little sugar, no
fat, and very little flour.
Although the basic angel
food cake is white it can be
varied with different flavors
such as chocolate or by add
ing 1 teaspoon cinnamon and
M> teaspoon cloves.
Another change is made
by carefully folding into the
egg white-flour mixture, V 4
cup crushed peppermint
sticks.
Baked in the traditional
angel food tube pan this cake
is often preferred plain with-

If you like your sweet pota
toes rich and spicy, rather
than overly sweet with
marshmallows or fluff, this
is a good dish for you.
If you prefer, you may
substitute butternut squash
for sweet potatoes. Halve the
squash lengthwise, scoop out
seeds and place squash
flesh-side down on a greased
baking sheet.
Bake in 400 degree F. oven
until squash is easily pierced
with a knife, about 1 hour.
Scoop out pulp and beat with
6 tablespoons salted butter
and spices in following rec
ipe.
Spiced New Jersey Sweets
4 pounds sweet potatoes
% cup butter, room tempera
ture
% teaspoon cinnamon
Va teaspoon nutmeg
V 4 teaspoon ground ginger
Pinch cloves
Salt and freshly ground pep
per
1 tablespoon minced fresh
parsley, Garnish
Preheat oven to 400 de
grees F. Generously grease
8- to 9-cup souffle dish. Make
2-inch slit in center of each
potato and bake until soft,
about 11—4 hours.
Remove from oven, re
duce oven to 350 degrees F.
and let sweet potatoes stand
until cool enough to handle,
about 20 minutes. Halve
lengthwise and scoop pulp
into large mixing bowl. Dis
card skins.
Add remaining ingre
dients, except parsley, and
beat well. Taste and adjust
seasoning. Turn sweet pota
toes into souffle dish and dot
with additional butter.
Bake uncovered until top
is lightly browned, about 1
hour.

Making
Madeleines
Madeleines are one of the
most popular cookies, or
little cakes, in France. In
order to make them, you
need to buy a special shell
shaped tin, which can be
purchased in a housewares
or cookware shop.
It is good to have two tins,
because the batter should be
used all at once and not al
lowed to sit while some coo
kies are baking.
Madeleines
V 2 cup butter
M> cup sugar
1 cup cake flour
Pinch of salt
Vi teaspoon grated lemon
rind
2 or 3 tablespoons confection
ers’ sugar
2 eggs
Preheat oven to 350 de
grees F. Grease and flour
madeleine tin. Grate lemon
rind on a piece of wax paper.
Put butter in saucepan and
set over low flame until
melted. Remove from stove
and set aside to cool.
Sift cake flour onto piece of
wax paper. Measure and
place in mixing bowl Add
sugar, salt, and lemon rind,
then mix together. Add eggs
and mix well. Add melted
butter and mix well.
Spoon dough into made
leine tin until it’s just a little
more than half full. Bake 15
or 20 minutes, or until cake
tester comes out clean. Re
move tin from oven and re
move madeleines from tin.
Cool on wire rack. Sift con
fectioners’ sugar over made
leines. Makes about 18.

light dessert.
