Everyone loves taste of limeade
Just picture a generous slice of
juicy emerald-green lime, dripping
as a garnish mi a frosty cold glass of
limeade. Just thinking about the re
freshing tangy taste is enough to
make your mouth water! And hot
weather is just the right season for
limes.
In the south most of the limes we
buy come from the southern tip of
Florida. Other limes come from Mex
ico and California.
Fresh limes are high in Vitamin c,
with one cup of fresh lime juice
having more than the recommended
daily allowance for Vitamin C. Brit
ish sailors learned long ago that con
suming limes and the Vitamin C they
contain mean they probably wouldn’t
suffer from scurvy. It’s because of
this that the term “limey’’ still lin
gers as a popular slang word for
British sailors.
Limes also make salt-free diets
more interesting. Their sprightly fla
vor helps bring out the flavor of other
foods just like salt but without
excess sodium. And limes are low in
calories, a lime two inches in diame
ter has wily about 19 calories.
Buying Tips: When buying limes,
look for those that are firm and heavy
for their size. They should have
smooth shiny skins and a deep green
color. Avoid limes that are dry or
hard and those that show signs of

DEAR READERS: On Aug. 22, the
following letter appeared in my col
umn:
“Dear Abby: We have three adult
crippled children (our own) all in
wheelchairs due to a rare genetic
form of cerebral palsy. However, this
is not the problem; I’m coming to
that.
“Our children love music, so we
bought them a used jukebox and
stocked it with their favorite records
mostly polkas, Irish ballads,
golden oldies, etc. Last December the
jukebox broke down. The dealer who
sold it to us tried to locate the transfer
switch that was needed to repair it,
but he told us that since it was a 20-
year-old Wnrlitxer, he doesn’t expect
to find one because the parts are not
being made anymore.
“Abby, the model is 2810 and it
plays only 455. It had a beautiful tone
before the switch broke.
“Can yon help me, or is this a
hopeless case?

punctures. While brownish irregular
mottling on the skin surface of limes
may look bad, it does not affect their
quality.
Storage: Limes should be kept re
frigerated. If stored in a plastic bag
with a few drops of water, they should
stay fresh for six to eight weeks.
Preparation: Take advantage of
the zesty flavor that limes add to our
diets. Here are Some tips:
• Roll limes between the palm of
your hand and the kitchen counter
before slicing. This makes the juice
easier to extract.
• Freeze fresh lime juice in ice cube
trays to have on hand to flavor your
favorite cold drinks. If you need your
ice cube trays, simply store the fro
zen cubes in a plastic bag in the
freezer until they’re needed.
• Cover sliced bananas, peaches,
apples or pears with lime juice to
keep them from darkening
• Fresh vegetables like broccoli,
cauliflower, asparagus or brussel
sprouts are sparked up by a liberal

An engineer in Maryland offered to
fly to Wilkes-Barre and restore the
jukebox to working order, regardless
of what was required free of
charge.

Gertrude tbeir collections of old re
cords. Some kind-hearted strangers
even sent checks to "help out.’’*'
The outpouring of generosity and
compassion for Gertrude and her
three disabled children had me and
my staff typing through tear-dimmed
eyes.
I telephoned Gertrude and spoke to
her and her husband, Chuck. They
were overwhelmed with gratitude
and said, “There is no way we can
thank all those wonderful people, so
will you please thank them for us?’’
You will be pleased to know that the
sound of music will again be heard in
Gertrude and Chuck’s home thanks to
Philip Roth, owner of Roth Novelty
Co. in Wilkes-Barre. He wrote to say
that he has represented the Wurlitzer
Co. for 25 years and he will gladly
provide the music-loving family with

vitamin C to your diet, try the follow
ing: Lime Salad
Dressing
M> cup fresh lime juice
Ms cup salad oil
1/8 tsp. paprika
3 tbs. orange juice
Put all ingredients in a blender
container. Cover and process at me
dium speed until well mixed. Serve
over fruit or vegetable salads. Yields
cup.
If you’re dieting and can find scal
lops at an especially good price, try
the following low calorie recipe.
Serve it with bread and steamed
broccoli to make this a low calorie
meal:
Lime-Dilled
Scallops
1 lb. scallops, fresh or frozen
2 cups water
Vi tsp. salt
2 medium tomatoes, seeded and
chopped
1 cup sliced celery
v < cup sliced green onions, omitting
tops
2 tbls. fresh dill weed, finely chopped,
or
2 tbsp. dried dill weed

Salad greens

employed registered nurse. I love my
work and make very good money.

In all probability she is. And please,
encourage your mother to see a doc

Thaw scallops if frozen. Cut large
scallops in half. In a 2-qt. saucepan,
heat two cups water and Vi tsp. salt to
boiling; add scallops. Reduce heat
and cover; simmer for two minutes
or until scallops are opaque. Drain.
Cool. Combine cooled scallops, toma
toes, celery, onions and dill weed. Top
with Lime Dressing; cover and chill
one hour. Drain dressing; spoon scal
lop mixture onto four lettuce-lined
salad plates. Makes four servings.
Lime Dressing
(For Lime-Dilled Scallops)
Combine all ingredients in a
shaker; cover tightly and shake well.
Nutritive value per serving:
Calories, 127; protein, 26 grams;
fat, two grams; carbohydrate, three
grams; sodium, 400 mgs; potassium,
540 mgs.
Note: This dish is better when used
soon after it is chilled for one hour. If

Everyone loves the taste of fresh
limeade.
Fresh Limeade
Syrup
2 cups water
1 cup sugar
1 cup fresh lime juice (about 8 limes)
In a saucepan, combine water and
sugar. Bring to a boil; reduce heat
and simmer 10 minutes. Cool. Stir in
Juice. Store covered in the refrigera
tor. Makes about 2Vi cups.
To serve sparkling Limeade: Com
bine equal parts of chilled fresh lime
syrup and soda water. Serve over ice
with a wedge of lime as a garnish.
When Mi cup syrup is used with Mi cup
of soda water, each serving contains
about 16 mg of Vitamin C. This is
about 1/3 of the Vitamin C needed
each day by children. Dieters take
note: One serving when made with Vi
cup syrup and Vi cup no-calorie soda
has about 164 calories.
