Hearty stew for that brisk wintery day power's offi
On a cold winter day, there’s noth
ing like a sturdy stew to warm the
body and lift the spirit. Here are
several recipes for hearty winter
eating.
Winter Wine Stew
2 pounds round steak, cut into chunks
3 tablespoons vegetables oil
V 2 cup dry sherry
2 large onions, sliced
1 cup beef stock
2 bay leaves
V 2 cup vinegar
3 tablespoons ketchup
cup raisins
Use: Dutch oven or casserole with
vented lid (or foil with 1 slit)
Oven: 350 degrees
Yield: 6 to 8 servings
Wipe meat dry and have at room
temperature for best browning.
Brown the meat in the oil in a casse
role or Dutch oven. Remove meat
from pan. Pour sherry over the meat
and toss lightly. Add onions to the
meat drippings in the pan and saute
briefly. Return meat and sherry to
pan and stir in remaining ingre
dients. Cover pan and place in a 300-
degree oven for 3 to 4 hours. Add
extra liquid, if necessary, during
baking. Or thicken gravy, if desired.
Good served with rice or noodles.
A duckling, or a sum of its parts, is
a grand dinner unless you’ve invited
a crowd.
Ducklings are fat, especially across
the breast and by the wings, but
they’re simple to prepare. No bast
ing, no stuffing, no trussing, no sauc
ing. Most duckling packages come
with excellent directions, but here
are the basics just in case:
If the duck is frozen, thaw it about
24 hours in the refrigerator in original
packaging. Remove giblets and neck,
rinse and pat dry. Remove excess fat
from inside. With a sharp knife,
pierce the fatty areas under the skin
to help drain off the fat as it cooks.
Salt and pepper the duck and tuck
inside some orange wedges or an
onion, carrot and celery sticks, if you
like.
Braised Duck
1 duck, cut in quarters, or 6 to 8 duck
legs
Vz cup flour
teaspoon salt; pepper
2 tablespoons cooking oil
3 /4 cup chopped onion
1 garlic clove, minced
V 2 cup orange juice
l /2 cup dry red wine
3 oranges
M> teaspoon crumbled thyme
l /2 teaspoon rosemary
3 tablespoons sour cream
Use: Large skillet or Dutch oven
Yield: 4 servings if whole duck is
used; count one whole leg per serv
ing.
Wash and dry duck; prick skin with
knife. Dredge duck pieces in flour,
salt and pepper. Heat oil in Dutch
oven or large skillet. Brown duck on
both sides. Remove from skillet and
set aside. Drain off all but 2 table
spoons drippings. Add onion and gar
lic briefly, then add orange juice,
wine, one orange sliced with peel,
thyme and rosemary. Return duck to
pan, cover and simmer for one and a
half hours. Meanwhile, peel other
oranges and section to use as a garn
ish.
Remove duck from pan and keep
warm. Skim pan juices and remove
orange slices. Stir in sour cream. Do
not boil. Spoon sauce over duck and
garnish with orange sections.
Cocoa from a mix cannot compare
with this version. You can enjoy it for
brunch or on a weekend. Sip it after

When power fails as it is likely to
during snow and ice storms the
thing that brings consumers the most
worry is the home freezer.
Food in a fully loaded freezer will
stay frozen for two days, and food in a
half-full freezer stays frozen about
one day.
The first thing that should be done
during a power failure is to resist the
urge to open the freezer door; then
find out from the utility company how
long the power is likely to be out.
Food in the freezer or ice cube
department of a refrigerator will
thaw more quickly than foods in a
deep freeze. Moving those foods
closer together or wrapping them in a
brown paper bag for insulation will
help.
Dry ice can also keep foods frozen.
About 2 pounds per cubic foot will
keep the compartment fairly cold.
Twenty-five pounds of dry ice will
keep the temperature of a half-full, 10
cubic foot freezer below freeezing for
two or three days.
When you purchase dry ice, have it
cut into slabs. Then place heavy
cardboard directly on frozen food and
set the dry ice on top of that. Always
wear gloves when handling dry ice.
Wrapping a freezer with blankets
and newspapers will add insulation
but be careful not to cover the air
vent openings. If the power returns
unexpectedly, they need to be free for
ventilation.
If the power failure is likely to be
extended over a few days, you may
want to take the foods to a cold
storage locker. Wrap well in newspa
pers for insulation.
Of course, when the temperature
outside is well below freezing, the
solution is simole.

Brazilian Hot Chocolate
V 3 cup unsweetened cocoa powder
V 4 cup sugar
1 tablespoon instant coffee granules
teaspoon ground cinnamon
Dash of salt
cup hot tap water
3 j /2 cups milk (enrich with cream, if
desired, up to 1 cup
whipping cream plus 2 1 /2 cups milk)
2 teaspoons vanilla extract
Yield: 6 servings
In saucepan, combine cocoa, sugar,
coffee, cinnamon and salt. Blend in

the hot water. Cook over medium
heat about 2 minutes, stirring con
stantly.
Add milk. Heat, stirring to serving
temperature. Do not boil. Beat in
vanilla with a rotary beater to create
foam on the surface. Serve steamy
hot.
(Note: If cooking the cocoa mixture
in a microwave oven, use a large
glass measure for the recipe. Heat on
full power and stir after 30 seconds.
Then stir again after cooking to
thicken. Gradually add milk and heat
at 70 percent power.)

Use: Greased 1-quart souffle dish
Oven: 375 degrees F.
Yield: 6 servings
Peel and cut each potato in half.
Pare and dice the rutabaga in fairly
large chunks. Place both vegetables
in a saucepan with water to cover and
cook until tender. (Can also be cov
ered with plastic wrap and cooked in
a microwave oven until tender.) Sim
mering time on the rangetop will be
approximately 20 minutes. Drain and
cool slightly.
Place both hot vegetables in larill
bowl and mash with softened crear*
cheese. Use electric beaters to fdP
ther smooth and blend. t
Meanwhile, have the butter
and saute the onion a minute. Stir into
the mashed vegetables, including aM
butter, the orange juice, salt, pepp#
and cinnamon. Beat in the egg yolks.
Beat egg whites with clean, dry
beaters in a small, narrowed-bot
tomed bowl until stiff peaks
Fold into the potato mixture. Turfi
into the greased souffle dish. Bake a t
375 degrees for 35 minutes or until
lightly browned on top.
