Prepare these tasty party snack recipes
Cut-out cookies
Cut: IV4 cups shortening into 4 cups
unsifted flour, sifted with Vs teaspoon
baking powder, Vs teaspoon soda, 1
teaspoon salt.
Beat together and blend into first
mixture:
2 eggs
IV4 cups granulated sugar
lVfc teaspoons vanilla
Have board and rolling pin dusted
well with confectioners’ sugar. Cut in
heart shapes. Bake on greased cookie
sheet at 400 F. Bake until just delica
tely brown, about 8 minutes. To deco
rate brush with thin confectioners’
sugar glaze. Sprinkle red decorative
sugar. This makes about 100 cookies.
If margarine or butter is used instead
of shortening, omit the salt.
Sugar glaze
IV2 cup powdered sugar, sifted
2 tablespoons warm water
IV2 teaspoons almond extract
If too thick, thin with warm water,
a drop at a time until desired consis
tency.
Grits and Caviar Bake
2 cups quick-cooking grits
1 cup milk
4 eggs beaten
1 (3-oz.) package cream cheese, soft
ened
6 tablespoons butter
1 pound bacon, cooked and crumbled
1 (8 oz.) can mushroom pieces,
drained
1 (8-oz.) can water chestnuts, drained
and chopped
V*> to % cup chopped pecans
3 (4-oz) cans red caviar

Some years back, a popular Middle
Eastern staple surfaced in North
America, and now it is almost a
staple here. Falafels are small, crisp,
chick-pea fritters that commonly are
served in warm pocket breads with
various relishes.
The story is that falafels were very
popular with nomadic people because
dried chick-peas were a protein sta
ple and quick to prepare at a camel
stop. I think they are delicious. While
the basic recipe is easy to prepare,
you can find many different brands of
falafel mix on the market today. They
cost a little more than preparing
them yourself, but they are time-sav
ers and contain no unhealthy ingre
dients.
Falafels are most commonly
served (in pocket breads) with
chopped cucumbers, tomatoes, let
tuce and tahini sauce. Tahini is a
sesame paste found in specialty food
sections or natural food stores. To
prepare it for falafels, mix Vfe cup
tahini with 5 tablespoons hot water,
then stir in 2 teaspoons each of lemon
juice and olive oil. Stir in 1 large,
pressed garlic clove and a dash of
salt.
Here is a falafel recipe, along with
a tomato-cilantro relish and a yogurt-
Roquefort sauce that is especially
nice on warm days. Incidentally,
leftover falafels are great diced and
tossed in a green salad or scrambled
with eggs. And, of course, they can
always be eaten cold in a sandwich or
as an appetizer.
Falafels
Ms cup bulgur wheat
Boiling water
2 cups cooked or canned chick-peas
(garbanzo beans),
drained
V 4 cup lemon juice
Vs teaspoon each, powdered cumin,
red pepper flakes
3 tablespoons fine, dry bread crumbs
2 tablespoons regular wheat germ
1 egg, beaten
Salt
Oil
Cover bulgur with boiling water
and set aside for 30 minutes. Mean
while, mash beans with lemon juice,
cumin, pepper flakes, bread crumbs
and wheat germ. (Use food processor
if desired.) Press excess water out of
bulgur and discard; stir bulgur into
chick-pea mixture with egg; add salt
to taste. Shape into small balls, flat
tening them slightly to 1 inch in
diameter. Heat oil in a large fying
pan. (It should be about Vi inch deep.)
When oil is hot, fry falafels on both
sides until lightly browned; drain on
paper towels. Makes enough for 5 or 6
pocket breads.

. Tomato-Cilantro Relish
2 large tomatoes, peeled, cored, fi
nely chopped
1 cup finely-chopped cucumber
Vs cup finely-chopped onion
3 tablespoons minced cilantro
1 teaspoon lemon juice
Salt
Combine tomatoes, cucumber, on
ion and cilantro. Sprinkle with lemon
juice and add salt to taste. Use with
falafels in pocket breads with
chopped or shredded lettuce, tahini or
mayonnaise. Makes enough for 6
pocket breads.
Yogurt-Roquefort Sauce
lVfc cups plain yogurt
4 tablespoons olive oil
Vs cup crumbled Roquefort cheese
Mix all ingredients together until
smooth. Use with falafels in pocket
breads with shredded lettuce and
chopped cucumber. Makes enough
for 6 pocket breads.

Stir in bacon, mushrooms, water
chestnuts and pecans, blending well.
Spoon into a greased shallow 2-
quart casserole; bake in preheated
350 degree oven for 20-30 minutes.
Spread caviar on top and serve hot.
NOTE: This could be baked in heart
shaped cake pan.
Quick Cherry Cakes
2 cans cherry pie filling mix
1 box white cake mix
IV£ sticks margarine, melted
1 cup chopped nuts
Butter two heart-shaped cake pans.

Pour the cherry pie filling into the
pans and sift the white cake mix over
this. Melt margarine and pour over
the cherries and cake mix. Sprinkle
the nuts over the top and bake at 350 F
for 45 minutes.

Vi cup butter or margarine softened
Cut bread with heart-shaped cookie
cutters and spread slices with soft
ened butter or margarine.
Horseradish-ham filling
2 (4Vs oz.) cans deviled ham
1 stalk celery, minced
1 tablespoon prepared horseradish

Combine and chill for spreading
Quick, easy muffins
Combine:
2 cups sifted self-rising flour
2 heaping tablespoons mayonnaise
1 cup milk
Blend thoroughly. Drop by spoon
fuls into greased muffin pans. Bake
at 450 F about 20 minutes. Grated
cheese may be added to the mixture
for cheese muffins to accompany
salads.
Oatmeal muffins
1 cup rolled oats, uncooked
1 cup buttermilk
1 cup flour, sifted
7s teaspoon salt
teaspoon baking soda
IJ/2l J /2 teaspoons baking powder
Tfe cup brown sugar, firmly packed
1 egg, beaten
1 cup raisins or dates
Combine oats and buttermilk and
let sit 30 minutes or longer. Sift flour,
salt, soda and powder together. Add
oil, brown sugar and egg to oatmeal
mixture; blend thoroughly. Stir in
dry ingredients and raisins, mixing
just enough to moisten. Spoon into
muffin tins and bake at 350 F for 25
minutes or until brown. Makes 12-16.
