‘God forbid: A Diet Coke and a Twinkie’

tame, the low-calorie sweetner,
should be eaten with protein-rich
foods to reduce the odds of an adverse
reaction, a researcher warned last
week.
■‘|God forbid you should have a Diet
Cdke and a Twinkie,” said Dr. Timo
thy J. Maher of the Massachusetts
College of Pharmacy and Allied
Health Sciences. Aspartame has been
associated with reduced IQ, seizures,
insomnia, behavior and other
changes, he told the Fourth Interna
tional Conference on Neurotoxicology
of Selected Chemicals.
Marketed as NutraSweet, aspar
tame is found in more than 90 prod
ucts. Since it was introduced by G.D.
Searle Co. in 1981, annual American
consumption had climbed to 454,575
tons last year. As a sweetner, only
sugar is more popular, he said.
But since 1983, when it was clewed
for use in soft drinks, consumption
has climbed toward worrisome lev
els, especially in children aged 6 to 11,
he added.
Maher has been studying amino
acids, one of which is found in aspar
tame, for eight years. He has studied
aspartame itself for several years
with colleagues at the Massachusetts
Institute of Technology.
The federal Food and Drug Admin
istration estimates that only 1 per
cent of the population consumes more

Mexican flavors need not be con
fined to tacos and enchiladas. They
can also be taken to the grill and patio
in a menu that includes beef and
shrimp, com relish and an avocado
salad.
The recipes call for the use of a
bottled picante sauce that can be
bought with mild, medium or hot
spiciness. Or you can use your own
special salsa, if desired.
Came asada
2 lbs. flank steak, well trimmed
% cup picante sauce
% cup olive oil or vegetable oil
2 clove garlic, minced
1 tsp. oregano, crushed
tsp. salt
Cut both sides of steak into di
amond pattern, about Vs inch into
meat. Place in plastic bag. Combine
remaining ingredients. Pour into
bag; press out air and fasten secu
rely. Refrigerate overnight, turning
bag occasionally. Drain meat, re
serving marinade. Place meat on
grill over hot coals or on rack of
broiler pan. Grill or broil 6 minutes;
turn. Grill or broil 4 to 6 minutes or to
desired doneness, brushing fre
quently with reserved marinade. Re
move meat to board or platter. With
sharp knife held at a slant, slice meat
very thin across the grain. Serves 6.
Southwest
skewered shrimp
1 lb. jumbo shrimp, peeled and de
veined, tail left on (16 to 18 per lb.)
% cup ketchup
% cup picante sauce
3 tbsp. firmly packed brown sugar
1 tsp. lemon juice
Rinse shrimp in cool running wa
ter; dry with paper towels. Thread
shrimp onto skewers. For sauce,
combine remaining ingredients, mix
ing well. Brush shrimp generously
with sauce. Place skewered shrimp
over hot coals or on rack of broiler
pan; grill or broil 5 to 8 minutes or
until shrimp is cooked through, turn
ing and basting occasionally with
sauce. Heat remaining sauce; serve
with shrimp. Serves 4.
Garlic grilled chicken
2 whole chicken breasts, boned,
skinned and cut in half
1 cup picante sauce
2 tbsp. vegetable oil
1 tbsp. lime juice
2 cloves garlic, minced
Vi tsp. salt
% tsp. ground cumin
V> tsp. oregano, crushed
Pound chicken breast halves be
tween 2 sheets of plastic wrap to %-
inch thickness. Cut each into 1-inch
wide strips; place in plastic bag.
Combine remaining ingredients, mix
ing well. Pour into bag with chicken;
press out air and fasten securely.
Place in refrigerator; marinate 1 to 2
hours, turning bag frequently.
Drain chicken, reserving mari
nade. Thread chicken into skewers,
accordian-style. Place over hot coals
or on rack of broiler pan. Brush
generously with marinade. Grill or
broil about 6 to 8 minutes or until
chicken is cooked through, turning
and basting frequently with mari
nade. Serve with additional picante
sauce. Serves 4.
Cookout corn relish
1 can (12 oz.) whole kernel com,
drained
Va cup chopped green pepper
% cup chopped red pepper
% cup picante sauce
V* cup ketchup
2 tbsp. finely chopped onion
2 tsp. sugar
Vt tsp. dry mustard
% tsp. salt
Combine all ingredients; mix
lightly. Chill. Stir before serving.

But Maher said one study found that,
when allowed to select their own food,
children consumed an average of 77
milligrams of the product each 2.2
lbs. they weighed. That’s roughly
equal to having drunk 4.5 liters of
aspartame-sweetened soda.
Such high consumption could cause
problems for children, fetuses and an
estimated 2 percent to 10 percent of
the population with a certain genetic
condition, he explained.

ounce diet soda contains about 200
milligrams of aspartame.
Maher said he believes there are
safe levels, but he said they still must
be determined.
Problems arise when aspartame is
digested, he explained. It is broken
into components, including the amino
acid phenylalanine or PHE. In cer
tain concentrations, PHE can affect
the brain’s ability to regulate a vari
ety of central nervous system func

Although the body is used to hand
ling PHE, which is found naturally in
variety of foods, the difference with
apartame is that PHE is the only
amino acid it generates. In other
foods, many amino acids would com
pete to be carried by special mole
cules into the brain. But with
aspartame, there is less competition
and more PHE is carried to the brain,
he said.

study of 517 persons who said they
had a bad reaction to aspartame.
The study concluded that while
some may be unusually sensitive to

serious threat to the general popula
