Buford coaches tailgate buffet-style
Crockpots, candles and coaches
they make an odd-sounding combina
tion, and yet these are precisely the
ingredients that two Buford women
have put together to create a much
appreciated “hospitality room” dur
ing the Buford High School football
and basketball seasons.
Three years ago Jan Harrison and
Mary Helen Williams decided to ex
pand on an idea introduced by the
varsity football coach Ed Cochran.
During the playoffs, Coach Cochran
had asked the Buford wives to pre
; pare some sandwiches and cake to
; have on hand before and after the
games for the staffs of both the home
and visiting teams.
Mrs. Garrison and Mrs. Williams
. seized on this gesture of good will and
decided they would like to make it a
really pleasant, full-fledged eating
experience, available at all five home
football games and the playoffs, as
well as two selected basketball
games.
The result was a generous buffet
dinner offering everything from
; cheese balls to chicken, to chocolate
desserts.
FOR TWO YEARS the women
cooked and paid for —all of the
food themselves, with the exception
of a few welcome donated dishes.
“I think a lot of people thought the
Booster Club was paying for it,” says
Mrs. Harrison.
Why did the women do it?
“We did it because we wanted to,”
says Mrs. Harrison. “I am a local
girl. I was reared here my whole life
and I graduated from here, so natu
rally I’m a little prejudiced. I’m
proud of Buford and our school sys
tem. If I can do something to make
the name of our town better, that’s
what I would love to do.”
However, at the end of last year the
women (and their budgets) had
reached the “burn-out stage,” and
they decided to bring the hospitality
room cooking to a close.
The end was not to be, though.
Buford Elementary Principal Phillip
Perkins, a former Buford High B
team football coach, begged the
women to continue with the much
enjoyed meals. The Booster Club,
Cochran and other individuals of
fered to pay for much of the food this
year. Volunteers called, offering to
help with the cooking.
“So here we go again,” laughs Mrs.
Williams.
A typical hospitality room buffet
includes such items as nachos with
cheese sauce, a cheese ball or other
appetizers; a meat dish such as bar
becued loin roast, chicken with dress
ing or homemade chili; chicken
drummettes; homemade pimento
cheese sandwiches; sausage and bis
cuits; vegetables such as green
beans, potatoes and creamed com;
and beverages, including iced tea,
soft drinks and coffee.
The dessert line almost always
boasts a pina colada cake; little fried
pies with apples, peach or sweet
potato fillings; brownies, cookies and
the biggest favorite of all “choco
late delight,” a layered concoction of
crunchy crust, smooth chocolate pud
ding, and a whipped blend of cream
cheese, confectioner’s sugar and non
dairy whipped topping sprinkled with
nuts and cherries.
AN AVERAGE of 75 people enjoy
this spread each home game. Invitees
include the two team coaches and
their wives, game officials, scouts,
school administrators, bus drivers
and sports reporters.
Cochran says the benefits of the
hopitality room go far beyond a full
tummy.
“It demonstrates good sports
manship,” he said. “Even though
you’re going into battle with the other
team, it’s nice to know that afterward
you can still have friendly words and
fellowship together.”
Last year after eating in the hospi
tality room the East Hall High team
Was so impressed that they returned
the favor by providing a hospitality
room when Buford came to play.
Beyond good sportsmanship, the
hospitality room also “is good public
relations with our own board of edu
cation and city officials,” says Coch
! But any good impressions are made
in spite of the less-than-ideal setting

DURING THE FOOTBALL season

field. It is convenient if not glamo
fous. During the basketball season

They set up a line of three or four
tables along one wall and cover them

and sterling silverware. One year at
Jlalloween they decorated the room
With shocks of com stalks and bales
of hay.
€ They had to deal with more than
Jlist the appearance of the weight
loom, though. There also was the
■ ‘‘The first time we walked in there,
we almost passed out,” said Mrs.
Williams.
v To combat the lingering smell of
■veaty bodies and damp clothes,
Sirs. Williams burned incense and
fioiled a pot of water containing cin-
Wamon, bay leaves and other sweet-
smelling spices.
“The football players wanted to
know what that ‘stink’ was,”
chuckles Mrs. Williams. “Stink! I
wanted to tell them, ‘lt’s better than
what y’all had!”
Ever since that first buffet, a custo
dian has cleaned the weight room
daily, so the odor has vanished.
Still, the women are always sure to
bring scented candles.
On the day of a home game, both
women really hustle.

As soon as they each get off work,
they hurry home to fix food and pack
up their gear.
THEN THEY DASH over to the
weight room, set up tables, and orga
nize the other food brought by volun
teers. Mrs. Williams can’t stay long,
though, since she must go down the
hill and help set up the football con
cession stand, too.
The hospitality room opens its
doors at 6 p.m. for those invited
guests who want to eat and socialize

During the game, Mrs. Harrision
goes to work in the concession stand,
Mrs. Williams watches her 17-year
old son Doug, Jr. play as defensive
end, and the hospitality room is
watched by Mrs. Williams’ mother
and friend.
When the game is over, around 10
p.m., the coaches and referees
usually grab a bite. If there are
leftovers, the football team is allowed
to come in.
“And then you don’t have any food
left,” says Mrs. Williams.
Not until nearly 11 p.m. can the

“Last year we’d bring home about
five or six boxloads of dirty dishes,”
says Mrs. Williams. “You’d spend
half the next day washing dishes.”
This year there are fewer dishes for
them to lug home since there are
more volunteer cooks.
The women have had some amus
ing moments during their three years
with the hospitality room.

had three crockpots, two coffeepots
and a couple warming trays plugged
in, and they blew a circuit, plunging

darkness. Fortunately both women’s
husbands are electricians, and they
took care of he problem right away.
There were the nights when friends
helped pack up the boxes, saying,
“This is Jan’p. This is Mary Helen’s.”
“We’d get home,” says Mrs. Wil
liams, “and I’d call Jan and say, ‘Do
you have my pan?’ and she’d say,
‘Yes, do you have mine?”’

town would think them prideful.
