Desserts are popular at Buford’s parties
Here are some of the most popular
desserts that Mrs. Harrison, Mrs.
Williams and their many volunteers
have prepared for the hospitality
room dinners:
Lee Perkins’ Chocolate delight
M: cup butter, melted
1 cup all-purpose flour
1 cup finely chopped nuts
1 cup confectioner’s sugar
8 ounces cream cheese
1 (16-ounce) container non-dairy
whipped topping
1 (3-ounce) package vanilla pudding,
cooked kind
1 (3-ounce) package chocolate pud
ding, cooked kind
3 cups milk
V 2 cup finely chopped pecans for
garnish
Maraschino cherries
Mix butter, flour and nuts. Press
mixture into 9 x 13-inch glass baking
dish. Bake at 350 degrees for 15 to 20
minutes. Cool well. Blend sugar,
cream cheese and half the non-dairy
whipped topping. Spread on cooled
crust. Place in refrigerator for 1
hour. Combine pudding mixes and
milk; cook according to package di
rections. Cool well. Pour chocolate
mixture on top of cheese and sugar
mixture. Top with remaining non-da
iry whipped topping. Sprinkle Vi cup
finely chopped pecans over top. Dot
with sliced maraschino cherries.
Mary Helen Williams’ Tropical bar
cookies
1 (9-ounce) box coconut bar cookies
1 (14-ounce) can sweetened con
densed milk
3 or 4 bananas
Non-dairy whipped topping
1 cup chopped pecans
In a 9x13-inch baking dish, crumble
coconut cookies. Pour sweetened con
densed milk over crumbs; let stand in
refrigerator overnight. Before serv
ing next day, slice bananas over
crumb mixture, top with non-dairy
whipped topping and sprinkle with
chopped pecans. Slice into bars.
Variation: Substitute macaroons
for coconut bar cookies.
Jan Harrison’s Black walnut cake
% cup butter or margarine
cup shortening
2 cups sugar
5 eggs separated
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon soda
1 cup buttermilk
1 teaspoon vanilla flavoring
1 teaspoon black walnut flavoring
1% cups flaked coconut
1% cups black walnuts, chopped
Cream butter, shortening and
sugar until light and fluffy; beat in
egg yolks. Sift together flour, soda
and baking powder; add to creamed
mixture alternately with buttermilk.
Stir, in flavorings, coconut and nuts.
Beat egg whites until stiff, fold into
batter. Turn into three or four
greased and floured 9-inch layer
pans, bake in 350-degree oven for 25
minutes, or until done. Cool layers on
rack.
Icing
2 (8-ounce) packages cream cheese,
softened
%‘cup butter
2 (1-pound) boxes confectioners’
sugar, sifted
1 teaspoon vanilla flavoring
Blueberry
pierogi
is a sure hit
According to a cookbook assembled
by Polish-Americna cooks, the fa
mous dumplings called Pierogi may
have many fillings. From cheese to
mushrooms and sauerkraut to fruit.
This summer we made Pierogi with
fresh blueberries and they were a hit.
The dough was pleasantly chewy, and
when we served the dumplings and
forks were thrust into them, the
blueberries spurted out with rich
color, juicy and flavorsome.
Blueberry pierogi
1 medium potato (about 5 ounces)
1 large egg
1% cups all-purpose flour (dip and
level)
2 to 3 tablespoons water
1 -cup fresh blueberries
2 tablespoons granulated sugar
Butter
Superfine sugar
Sour cream
Scrub potato; boil until tender;
peel, mash and cool. Mix potato with
egg, flour and enough water to form a
dough; knead until smooth. Roll out
on a prepared pastry cloth with a
stockinet-covered rolling pin to a 12
by 9-inch rectangle; cut into 3-inch
squares. Mix together blueberries
and granulated sugar; spoon 1 table
spoon of mixture onto each square of
dough. Fold each square into a trian
gle, pressing edges together well to
seal. Bring a large saucepan of water
toa boil. (If you like, add salt to taste
td the water. Drop pierogi into the
boiling water and cook until they
come to the surface; continue to cook
2 minutes longer. With a slotted
spoon, remove pierogi and drain.
Melt a generous amount of butter in
a. skillet; add pierogi, and lightly
brown on both sides. Serve hot. Pass a
bowl of superfine sugar and a bowl of
sour cream.
1 teaspoon black walnut flavoring
1 cup black walnuts, chopped
Cream together cream cheese and
butter; add sugar and flavorings,
mixing well. If too stiff, add milk to
spreading consistency. Add nuts.
Joan Moore’s Pina colada cake
1 box white cake mix with pudding in
the mix
2 (9-ounce) packages frozen coconut,
thawed
1 (15-ounce) can cream of coconut
(found in mixed drink section), at
room temperature
1 (12-ounce) container non-dairy
whipped topping

Prepare cake mix batter according
to package directions; stir 1 package
of thawed coconut into batter. Pour
batter into 9x13-inch baking pan.
Bake according to package direc
tions. When cake is taken from the
oven and is hot, prick top all over with
a fork. Shake cream of coconut well;
immediately pour over entire top
surface of cake. Cool on counter until
liquid is absorbed. Refrigerate over
night. Spread non-dairy whipped top
ping over top; sprinkle second
package of coconut over top. Store in
refrigerator.
Variation: Spread drained crushed

In a large punch bowl, crumble one
cake layer. Top with one-third of the
pineapple including the juice, -one
third of the pudding, one-third of the
strawberry pie filling and one-third of
the non-dairy whipped topping. Re
peat layers twice more, ending with
non-dairy whipped topping on top.
Refrigerate.

1 (6-ounce) package chocolate chips
Preheat oven to 350 degrees. Cream
butter and sugars. Beat in egg and
vanilla. Sift dry ingredients; add to
creamed mixture. Stir in chocolate
chips; spoon mixture into pie crust.
Bake at 350 degrees for 40 to 45
minutes. Pie will be soft in the mid
dle.
