Small gadgets bring ease to homemaker
If you are shopping for a micro
wave oven you will see them more
and more in the housewares depart
ment of stores . This is due to the
downsizing of the ovens. There they
will be displayed in combination with
microwave cooking accessories and
utensils.
• We are going to see a lot of
advertising in the next few months on
small appliances. Manufacturers are
introducing their new under-the
counter or cordless versions of old
favorite helpers in the kitchen. Non
electrics or items such as knife racks

Researchers
try drying
blueberries
An overabundance of fresh blueber
ries in Georgia during harvest season
has led Georgia Experiment Station
food science researchers to investi
gate methods of drying blueberries
for snacks, cereals and baked goods.
Dried blueberries aren’t a new
idea, but past attempts at dehydrat
ing them were less than impressive.
Conventional methods resulted in a
hard-as-arock product that wouldn’t
tempt a hungry blue jay. So research
ers went back to the drawing board.
“Blueberries can’t be sundried like
raisin because their sugar content
isn’t high enough to keep them them
from drying out during the dehydra
tion process. So we began trying
other methods that wouldn’t destroy
the flavor or the chewiness of the
berries,” says Romeo Toledo, Exper
iment Station food scientist.
Current experiments involve mix
ing the blueberries in a syrup solution
before drying. Best results have been
obtained when theberries are sus
pended on a column of air during
drying, which prevents them from
sticking together.
“It’s a relatively simple process
that results in a much more appeal
ing end-product,” Toledo said. “An
other advantage of this method is that
it produces a marketable by-prod
uct— a tasty blueberry syrup suitable
for pancakes.”
