Festive holiday party food for the diabetic guests

During the holidays, people who are
diabetic or on weight reduction diets
also attend parties. Therefore it is im
portant for the host or hostess to have
something they can eat.
A wise choice for decorating the ta
ble at a holiday party is the use of raw
vegetables. A Styrofoam cone can be
used as the base (other alternative
items can be pineapple, grapefruits or
even eggplants). These are covered
with lettuce, anchoring the leaves
with toothpicks, then still using tooth
picks stick raw vegetable chunks onto
the cone or alternative items used as a
colorful arrangement.

course has a $25 prize; and the best
overall has a SSO prize.
When submitted, all recipes should
be typed or clearly printed.

Cucumber Dip:
1 cup plain, low fat yogurt
1 large cucumber, peeled, seeded
and cut into small pieces
Vi small onion or 3 green onions cut
into pieces
Dash of freshly ground pepper.
Combine all ingredients in blender
and whirl until well blended. Pour into
a bowl and refrigerate for several
hours or overnight.
This dip can also double as salad

dressing. It tastes sinfully creamy,
but won’t ruin your day’s calorie
count and will work into diabetic meal
plans easily.
Try combinations of your favorite
herbs and spices with yogurt; dill and
onion, oregano, and parsley with 1 or 2
teaspoons of parmesan cheese or
horseradish and mustard.
Yogurt lends itself well to dozens of
mixtures, experiment in your own
kitchen during the holiday season and
become a hit at your own party.
