duck or goose, as is thyme mustard,
according to the book: tarragon mus
tard goes well with chicken, lamb and
turkey; rosemary also goes well with
lamb: and garlic or chive mustards
are good partners with beef.
Here are some of the authors’
recipes:
BASIC HOMEMADE
MUSTARD
1/4 cup mustard seed
1/4 cup dry mustard
1/2 cup hot water
1/2 cup white wine vinegar or fla
vored vinegar
1 teaspoon salt
1 teaspoon honey
In a small bowl, combine mustard
seed, dry mustard and water Let sit.
Possible health risks of diet programs
In the face of recent lawsuits
against the Nutri/System weight loss
firm and U S. House subcommittee
hearings on the weight loss industry,
diet programs are being asked to ex
plain how they inform their clients
about possible health risks of their
diet plans and how they minimize
those risks. Here is what some of the
programs are saying. Moderate calo
rie diet plans (1.000-1,500 calories)
are indicated by MC; very low calorie
diet plans are indicated by VLC:
- WEIGHT WATCHERS (MC) -
"We always recommend, before they
even join a weight-loss program, ours
or anyone’s, that they go to a doctor
and get a doctor’s approval.” - Amy
Nicholson, public relations manager
of Weight Watchers in Atlanta.
- JENNY CRAIG (MC) - "We’ve
helped develop a form that you fill out
with 30 some odd questions on it ask
ing if you ever had gallstones, kidney
stones, etc. There are certain things
that raise some flags. In those in
stances, we require that people go
back and get a physician’s approval.
We have to have that in writing." -

MUSTARD
Basic mustard recipe, substituting
mint vinegar
2 teaspoons freshly ground corian
der seed
MUSTARD SAUCE
3 small cans dry mustard (1 1/8 oz.

1 cup cider vinegar
2 eggs, beaten slightly
1 cup sugar
11/2 cups mayonnaise
Mix mustard and vinegar and allow
to stand for 6 to 8 hours. Add mustard
mixture to eggs and sugar and mix
well. Cook over low heat until thick
ened. Stir constantly. Cool. Add may

they have any serious medical con

Losing weight at 1,000,1,200 or 1.500
calories a day is healthful. There real
