Tickets still available for Tour of
Homes and Lake Lanier cruise
Take a springtime cruise on Lake
Lanier aboard the yacht Amistad,
and tour three of Forsyth County’s
exquisite homes. The sixth Annual
Tour of Homes to benefit The
Place is scheduled for Friday and
Saturday, May 17 and 18.
The popular annual event bene
fits The Place, Rural Social
Services, and a portion of each
ticket sale is tax deductible. The
Place provides emergency ser
vices for people in need through
out the county. The organization
is a lifeline to people who need
help with medical expenses,
emergency fuel needs and supple
mental groceries. The tour is a
principal fund-raiser for The
Place.
The most popular cruise - the
Sunset Cruise - is priced at $35
and includes a relaxing two and a
half hour cruise aboard the luxury
yacht Amistad, your choice of
beer or wine and hearty hors d’
oeuvres. Robert Wcngler of
Jaboney’s Fine Catering will be
preparing the refreshments.

Coleslaw can be a
low calorie side dish
Cabbage is a member of the cru
ciferous vegetable family. This
family includes tasty vegetables
such as Brussels sprouts, broccoli,
cauliflower, collards, mustard
greens, kale and turnips. Cabbage
and its extended family are an
excellent asset to any diet plan
since they are believed to contain
generous amounts of beta
carotene, vitamin C and vitamin
E.
Beta Carotene (a form of vita
min A), vitamin C and Vitamin E
are all considered antioxidents.
These vitamins appear to protect
the body’s tissues against cancer
by blocking cancer-causing agents
before they can cause harm. In
addition, they may help to prevent
or delay heart disease, and may
possibly protect against cataracts
and aging.
Besides being down-right good
for you, cabbage is extremely low
in calories. One whole cup of raw
cabbage contains a minuscule 16
calories. This is quite a bargain if
you are trying to watch your total
caloric intake. The only obstacle
that gets in the way when you arc
ordering cabbage at a restaurant is
that it is usually mixed with lots
of high fat ingredients to give it
flavor.
One of my favorite foods is
coleslaw. Since it is so low in
calorie at least when I fix it at
home I tend to eat large quanti
ties of it. The good news is that
eating a large amount will really
fill you up. This is very helpful if
you are trying to eat less of the
main course or are attempting to
skip dessert. Since cabbage con
tains such a large percentage of
water, you tend to get full even
before you have had a chance to
eat a large number of calories.
The bad new is that cabbage
and its relatives are large gas pro
ducers and may cause bloating.
Remember, moderation is the
key.
One of the biggest problems in
ordering coleslaw at a restaurant
is they traditionally use the regu
lar mayonnaise instead of the
“light.” When you compare regu
lar mayonnaise, which contains
approximately 100 calories and 10
grams of fat per tablespoon, with
the “light” mayonnaise, which
contains 40 calories and three
grams of fat, it is obvious what a
significant difference coleslaw
made with various types of may
onnaise can make.
For example, if a recipe calls for
one cup of mayonnaise, it would
add 1600 calories to the coleslaw.
By simply substituting “light”
mayonnaise, you are adding only
640 calories. If possible, ask your
restaurant owner to switch to the
“light” mayonnaise and you will
be helping to trim not only your
own waistline, but that of all the
other restaurant patrons.
The following recipe for
coleslaw with pineapples and
raisins is sweet, low-calorie,
sugar-free and delicious. If you

dinner cruise on the Amistad.
Ticket B, priced at $35, is for
May 18 at 9:45 a.m. and will offer
a luncheon cruise on Lake Lanier
and a tour of the three homes.

Sweet Coleslaw with Raisins
and Pineapple
8 cups shredded cabbage
1/2 cup low-fat mayonnaise
1/4 cup white vinegar
1 teaspoon cinnamon
1 teaspoon chives
1/2 teaspoon lemon pepper
1/8 teaspoon cayenne pepper
6 packets Equal
2 tablespoons raisins
1/2 cup crushed pineapple
Finely shred the cabbage.
Combine the remaining ingredi
ents, toss with the cabbage. Let

physiologist.
Martino is the author of "Eat
Your Way Thin," a hook on low

Ms. Martino also conducts semi
nars on low fat eating and will be
appearing at North Point Mall on
May 18 in the food court area.
She will be a guest on the WSB
750 AM radio program “Women's
World” with Sabrina Gibbons on
June 2, and on June 4 she will
demonstrate low fat cooking on
the “Noonday" program with
Maria Shavin on Channel 11.
