'Highlighting the Family 1
The Midway Elementary School PTA held
“Highlighting the Family,” its annual opportunity for
parents to acquire and share information on how to
enhance family life and relationships. The evening
featured Bob Lancer, right, a parenting and child dis
cipline expert from local radio and television, and
author of the book, “Parenting with Love... Without
Anger or Stress.” Above and below, the “Country
Characters” provided entertainment for the children
while their parents participated in the workshops and
listened to Lancer.

Falcons fever
Daves Creek Elementary students on bus driver Susan Mclntyre’s route got into the spirit of the
Superbowl last week. Mclntyre hung streamers on the front of the bus in the Falcon colors.
Mclntyre and the kids named Friday “Falcon Day.” They wore black and red to show their support
for the team and Principal Mary Hanwell captured the moment on film.
Get more creative with kids’ food
Don’t know what to pack in your
child’s brown bag lunch? Just ask!
Children are more likely to eat
foods they’ve hand-picked or hand
made rather than lunch items
which have been selected for them,
says Doris Christopher, president
and founder of The Pampered
Chef Ltd. and an advocate of fami
ly mealtimes.
Christopher suggests including
children in the lunch preparation
process from the get-go. Successful
lunch-packing often begins with a
trip to the grocery store. Involve
children in the selection of nutri
tious lunch items. Eating a bal
anced lunch gives children the
energy and concentration levels
they need to continue learning
through the afternoon hours.
Challenge your child to build a
lunch that includes at least three
healthy items, then throw in a treat
for good measure.
Many schools offer a mid-morn
ing “fruit break.” Remember that
whole fruit can sometimes be
messy or frustrating for a child,
often ending up at the bottom of a

trash can or backpack. Instead, pre
pare or purchase ready-to-eat,
child-sized pieces of fruit and veg
etables (think orange slices, baby
carrots and grapes). Crinkle cut
carrots, apples or pears for a fun
twist on the everyday. Spray or
brush cut fruit with lemon juice to
prevent browning.
Here are some other alternatives
for memorable mid-day meals:
Bread-wise: Bagels, pita bread,
tortillas and crackers take the tradi
tional sandwich to the next level.
Or, cut the sandwich into fun
shapes. (This can be done using
bread-baking tubes, available in
heart, star and flower shapes.)
Pint-sized portions: Single-serv
ing, disposable containers of low
fat cottage cheese and yogurt pro
vide necessary nutrition without
messy leftovers or overwhelming
portions. Try mixing a serving of
low-fat granola into flavored yogurt
for a crunchy treat. Don’t forget to
send along a plastic spoon.
For a tasty lunchtime snack kids
can make and share with their
classmates, try this recipe for
Fluffy Peanut Butter Dip from The
Pampered Chef’s “Kids in the
Kitchen Cookbook.” It’s as easy to
make as it is tasty. Crisp apple and
pear wedges make great dippers.

Fluffy Peanut Butter Dip
1/2 cup creamy peanut butter
8 ounces vanilla yogurt
1/8 teaspoon ground cinnamon
1/2 cup thawed, frozen, whipped
topping
Apples or pears for dipping
1/2 cup thawed frozen whipped
topping
Apples or pears for dipping
Place peanut butter, yogurt and
cinnamon in bowl; stir with whisk
until thoroughly blended. Using
whisk, gently stir whipped topping
into peanut butter mixture until
blended. Chill dip until ready to
serve.
