I was at a training for
Commercial Pesticide Applicators
recently and I’ve also taught sev
eral classes on pesticide safety in
the last few weeks. Talking with
people during these events, I
began to realize that some of our
concern about pesticides may be
off the mark, and maybe a bit out
of perspective compared to some
other everyday issues.
This is a broad subject, so just
consider pesticides in food for
today, since the fruit and veg
etable season is just around the
corner. I’ll probably write some
more about pesticides in the
future.
Many of us are concerned about
pesticide residues in food. But are
these fears founded in anything
more than media hype? As an
example, you hear of 30 people
getting sick from pesticide
residues. That sounds like a lot,
but what percentage of the popu
lation who could be affected do
these people represent? Relative
to many other injuries or illnesses
we encounter every day, the per
centage is small, I’m sure.
In 1991, the Food and Drug
Administration tested 19,000
samples of grains, fruits, dairy
and egg products, vegetables,
k fish, and other meats for pesti
cide residues. Os these, 99 per
cent had no pesticide residues
above the designated thresholds.
In 64 percent of the samples
* there were no pesticide residues
at ail.

People tend to fear pesticides on
fruits and vegetables more than
other foods, since fruits and veg
etables are often eaten raw. So the
USDA tested 12 common fruits
and vegetables. Only 1.5 percent
of the samples had residues above
federal guidelines.
Now, being married to a statisti
cian 1 know as well as anyone
that statistics can be manipulated
and don’t always tell the whole
story. Some of you might say
with a scowl, “well any residue at
all is too much," or “yeah, but
what do those numbers really
mean?"
But consider that the U.S. National
Research Council/National
Academy of Science and the
National Cancer Institute of Canada
recently issued reports that encour
age the consumption of fruits and
vegetables. Both groups found
that the benefit from eating fruits
and veggies outweighed any addi
tional risk associated with pesti
cide residues. Millions of dollars,
and often several years, go into
scientific research that we can
rely on to document the safety or
harmfulness of our pesticides.
On the pther hand Americans
spend millions of dollars each
year on vitamins and herbal
remedies about which we know
very little regarding their bene
fits or purity; many of them have
known health risks and for oth
ers the risks are unknown.
People become sick or die from

dards?
So consider our options. We
can grow it ourselves, accept the
negligible risks, or not eat it.
The choice is ours. We’ve come
to expect perfect produce, and
we can’t realistically expect this
without using some pesticides,
given that the yield from every
acre of farmland is and must be
so much higher than years ago.
I’m not saying that being con
cerned about pesticide use is not
legitimate or that everyone is
concerned. In fact, a consider
able percentage of people are
not concerned. I am saying that
we would better off by worrying
about things we can control, like
safe pesticide use in and around
our own homes, or cleaners and
solvents we use. Heck, I proba
bly absorbed more harmful sub
stances through my skin work
ing on the car the other night
than I have through fruits and
veggies in the past year. What
about how we handle the food
after we get it? What about
smoking and drinking? Just
some food for thought. And as I
leave my office tonight after
writing this, I’ll have to be very
careful not to get hit by a
cement truck as I cross the
street.

White film on glasses
Q: I’ve noticed a white film on
my glasses. Why is this happening
and what can I do?
A: The white film is an indication
that hardness minerals from the
water aie being deposited on the
glasses. This is a film that normally
occurs when the water is hard, not
enough detergent is used, water tem
perature is low or no rinse aid is
used.
To identify
To verify that the white film is hard
water filming, soak the glass approx
imately 5 minutes in undiluted white
vinegar. Rinse and dry. If the film is
removed it is hard water filming. If
the film is not removed, it is possibly
another type of film such as etching.

Possible causes
1. Hard water and not enough
detergent
This combination may leave hard
water minerals that dry on the sur
face of the glassware creating a film.
Unremoved food soil may also cause
filming.
To prevent, increase the amount of
detergent used according to the
degree of water hardness.
As a general rule, one teaspoon of
detergent is needed per grain of
water hardness with a minimum of
three teaspoons. However, when
using a concentrated dishwashing
detergent, follow manufacturer sug
gested amounts. Your local water
utility or Cooperative Extension
Service can tell you the water hard
ness for your area.

Many of these deaths occurred
in house fires where smoke
detectors were either not pre-

For a normal or longer cycle place
the recommended amount of deter
gent in each detergent cup. For
shorter cycles place the recommend
ed amount of detergent in the main
wash cup only.
If the water is over 12 grains hard,
you may need to use additional
detergent (1 teaspoon for each grain
over 12) at the beginning of the main
wash portion of the cycle. (Open the
door, add detergent to the bottom of
the tub, close the door and the dish
washer will continue through the
cycle.) If this does not give satisfac
tory results, the only solution may be
to soften the water mechanically.
When water is over 15 grains of
hardness, it is very difficult to get
good dishwashing results in any
brand of dishwasher.
Sometimes results may improve by
switching to a different type or
brand of dishwasher detergent.
2. Low water temperature
Proper water temperature is need
ed to activate the dishwasher deter
gent, dissolve greasy food soils and
warm the interior for good drying
results.
The water heater should be set at
140 degrees, if water heating
options such as temp boost and sani
rinse are not available or not select

To check the water temperature,
place a food thermometer in a glass
and set it in the sink below the
faucet, allow hot water to run into
the glass until the temperature stabi
lizes and take a reading. Adjust the
water heater accordingly.
To insure the dishwasher is filling
with the hottest water possible, do
the following:
Before starting the dishwater, let
the faucet at the nearest sink run
until the water is hot.
Avoid running the dishwasher
while hot water is being used for
other activities like showers or laun
dry.
3. Not using a rinse aid
A rinse aid improves the sheeting
action of the water. Use liquid rinse
aids in the dispenser.
Cost varies from 2 to 6 per cycle
depending on the dispenser setting.
If the dishwasher is not equipped
with a dispenser, place a disc or bas
ket in the back right comer of the
lower rack.

1. Wash dishes using a rinse aid
according to package direction. If
filming is extremely bad, ittinay
require repeated washing.
