Get creative with oats
2 tablespoons canola
oil
1/2 pint blueberries
(fresh or frozen)
1 teaspoon lemon zest
1 teaspoon lemon juice
Preheat oven to 400
degrees. Spray baking
sheet with non-stick
cooking spray.
In a large bowl, whisk
together ground oats,
flour, sugar, baking pow
der, baking soda and salt.
In a small bowl, combine
the yogurt and canola oil.
Make a well in the
flour mixture and add the
yogurt mixture. Add blue
berries, lemon zest and
lemon juice. Stir just until
combined.
Drop 1/4 cup amount
of batter onto prepared
baking sheet.
Bake until lightly
browned, about 15 min
utes.

Oats are one of those
ingredients we often for
get about.
That's a shame since
they are so healthy and
actually quite versatile.
In numerous studies,
oats have been shown to
reduce the risk of devel
oping heart disease.
In addition, oats help
lower bad cholesterol
and are high in soluble
fiber.
The fiber is important
because if you are trying
to lose a few pounds, and
who isn’t, oats can make
you feel fuller longer,
helping curb your appe
tite.

scones
1 cup whole oats,
ground up in the blender
1 cup whole wheat
flour
1/4 cup sugar
. 2 teaspoons baking
powder

1 stick unsalted butter,
softened
1/2 cup molasses
1/2 cup sugar
1 egg
3/4 cup rolled oats
1/2 cup raisins
1/2 cup butterscotch
chips
Preheat oven to 350
degrees. Butter and flour
a 9- by 13-inch baking
pan.
Sift the dry ingredients
together and set aside. In
an electric mixer, cream
the butter, molasses and
sugar until light and
fluffy.
Beat in the egg and add
the reserved dry ingredi
ents and mix until just
incorporated.
Fold in oats, raisins and
chips. Spread dough in an
even layer on prepared
pan and bake for 20 to 30
minutes or until lightly
browned.
Let cool on a rack for
10 minutes then carefully
cut in to bars about 3
inches square.
Remove bars from pan
and allow to cool com
pletely.

the flour, baking powder,
baking soda, salt, oats
and pecans together. In a
large bowl, beat the butter,
brown sugar and granulat
ed sugar together for 30
seconds until blended.
Beat in the egg until
smooth and barely fluffy.
With mixer running on
medium-high, drizzle in
the maple syrup and vanil
la until incorporated. Turn
the mixer down to its low
est setting and gradually
add the flour-oatmeal
mixture. Blend just to
combine, then mix in the
chocolate chips.
Drop walnut-sized balls
of dough onto a nonstick
or parchment-lined cook
ie sheet at 3-inch inter
vals. With moistened fin
gers, flatten and round
out the cookies a little.
Bake for nine minutes,
turning the pan once for
even baking. The cookies

In a slow cooker, com
bine all ingredients and
set to low heat.
Cover and let cook for
eight to nine hours. Stir
and serve.
