Tips for Halloween treats
1 (4-ounce) bar dark
chocolate, chopped into
1/2-inch pieces
Assorted small candies,
chopped nuts and sprin
kles :
Special equipment: six
craft or thick wooden
sticks .
Line a baking sheet
with parchment paper and
spray it with vegetable oil
cooking spray. Insert the
craft sticks halfway into
the stem ends of the
apples.
In a medium, heavy - .
saucepan, over low heat,
combine the caramel can
dies and orange juice.
Cook, stirring occasional
ly, until the candies have
melted and the mixture is
smooth, about 10 min
utes. Set aside to cool for
two minutes. Dip the
apples in the caramel
until coated and put them
on the parchment paper
until firm, about two
hours. .
Put the chocolate in a
medium bow] and set it
‘'over a pan of barely sim
mering water. Stir until
the chocolate is smooth
and melted. Using a fork,
I well remember how
excited our four children
were when we began the
seemingly endless, week
long countdown until the
big day.
I have always felt for
teachers who have'to
somehow teach our chil
dren when Halloween
falls on a weekday. And
then, of course, really felt
for them when they had
to teach our children the
day after a late night of
trick-or-treating and all of
that sugar overload.
That said, I do miss the
days of making home
made Halloween treats
with our children. Here
are some recipes we
always enjoyed making
right at this time of year.

Vegetable oil cooking
spray
6 small apples, washed
and dried, stems removed
2 (9.5-ounce) bags soft

late over the caramel. Put
the apples back on the
parchment paper for 10
minutes. Sprinkle with -
small candies, chopped
nuts or sprinkles and .
allow the chocolate to
harden, at room tempera
ture, for about three to
four hours.
Pumpkin chocolate
chip cookies
1 cup (2 sticks) unsalt
ed butter, softened
1 cup white sugar
1 cup light brown sugar
2 large eggs
1 teaspoon vanilla
extract
1 cup canned pumpkin
puree : :
3 cups all-purpose flour
2 teaspoons baking
soda
1/2 teaspoon salt 5
1 teaspoon ground cin
namon ;
1/2 teaspoon ground
ginger :
1/4 teaspoon ground
nutmeg .
1/4 teaspoon ground
cloves .
2 cups milk chocolate
chips -
Nonstick cooking spray
or parchment paper '
Heat the oven to 350
degrees. Spray cookie
sheets with nonstick
spray or line them with
parchment paper.
Using a mixer, beat the
butter until smooth. Beat
in the white and brown
sugars, a little at a time,
until the mixture is light
and fluffy. Beat in the
eggs one at a time, then
mix in the vanilla and
pumpkin puree.
In a large bowl, whisk
together the flour, baking
soda, salt, cinnamon, gin
ger, nutmeg and cloves.
Slowly beat the flour
mixture into the batter in
thirds. Stir in the chips.
Scoop the cookie dough
by heaping tablespoons
onto the prepared cookie
sheets and bake for 15 to

Other spooky ideas
» Get some Halloween-shaped cookie cutters, such as ghosts, bats,
pumpkins, etc. Use these to not only make sugar cookies, but also use
to make sandwiches. Children love to see a “bat” sandwich — even if it
is simply peanut butter and jelly or ham and cheese.
* Mix up a batch of punch. This can really be any concoction your
people enjoy —some frozen juice, with some lemon-lime seitzer, and
various fruit added. To serve, simply add some Halloween gummy
worms or other critters and a straw. The kids will love it.
" elif you are having a party or get together, don't forget to setout -
some fresh, cut-up vegetables along with some sort of dip. Just put the
dipina cute or “scary” Halloween container and name it something
frightful. ' :
* Dry ice definitely adds ambience to any sort of Halloween get
together. Just make sure you follow manufacturer’s instructions and
don’t allow young children to handle it.
» Spooky music on Halloween night is a must.

the popcorn kernels and
peanut oil. When the oil
starts to sizzle, sprinkle
the sugar over the kernels.
Cover with a tight-fitting
lid and shake the pot until
the popping slows down,
about eight minutes. -
Remove from the heat
and set aside to cool.
Spray a large bowl with
cooking spray and add
the popcorn, candy corn
and peanuts.
Combine the marsh
mallows and butter in a
large pot over medium
high heat. Cook, stirring,
until melted and smooth,
about five minutes.
Pour the melted marsh
mallow mixture over the
popcorn mixture and gen
tly toss to coat.
Coat your hands with
cooking spray, then shape
the popcorn into 3-inch
balls. Let cool.
