Try making Gazpacho
tle kick. You can use fresh
tomatoes if you blanch
them and remove their
seeds. but canned toma
toes are quick and will
give you terrific results.
Look for San Marzano
canned tomatoes if possi
ble. If you have some stale
bread on hand. you can
pulse it into crumbs and
then soak them in ice cold
water and add it to the
mix. but the soup tastes
fine without this extra
step. At your next party,
try serving the Gazpacho
in chilled martini glasses
garnished with cocktail
shrimp. It's also the per

Gazpacho and this is the
perfect time of year to
enjoy a refreshing bowl of
the chilled soup.
Gazpacho originated in
the southern Spanish
region of Andalusia and is
still widely enjoyed
throughout Spain and
Portugal. The soup has
numerous ancient roots
and many variations. In
Andalusia, most recipes
call for stale bread, toma
toes. cucumbers, bell pep
pers. onion, garlic. red
wine vinegar. water and
salt. I like to throw in a lit

Y 2 cup parsley, minced
(reserve a little for gar

1 teaspoon Tabasco
(more or less to taste)
13 avocado, peeled, seed
removed. and diced
(optional for garnish)
In a small bowl, com
bine the reserved onion,
red pepper and cucumber.
Set aside. In food proces
sor or blender, pulse
together all ingredients
except avocado and
reserved vegetables. Do

ber. If possible, refrigerate
the soup overnight or at
least a few hours to allow
flavors to meld. Garnish
with avocado and some
parsley.

European cucumbers, sim

ones. Just be sure to peel
and seed the regular ones
or your Gazpacho will be
bitter.

1/3-cup Kalamata
olives, pitted (optional)
1/4 cup fresh basil
leaves, washed well, dried
and chopped
V 4 cup red onion, finely
minced
V 4 cup extra-virgin olive
oil
2-Y2 tablespoons red
wine vinegar
2 cloves garlic, minced
Salt and pepper
In salad bowl, combine
toasted bread cubes, toma
toes, olives, and basil and
red onion. In small bowl,
whisk together olive oil,
red wine vinegar, garlic,
salt and pepper. Taste for
seasoning. Pour dressing
over tomato salad, tossing
gently to combine. Let
stand at room temperature
for 15 or 20 minutes so
that bread absorbs dress
ing
