Tips for cooking kale
How is it that some
times the healthiest foods
on earth are the ones so
many people don’t partic
ularly care for? While I
am a big fan, I know lots
of people who are not real
keen on kale. If you are a
kale-hater, my hope is
this column and the fol
lowing recipes will con
vince you to give this
superfood another try. |

might not know about to
help your kale be the best
it can be. -
So why eat kale? Rich
in vitamins A, C and K,
kale has numerous bene
fits when it comes to your
health. Kale supports
your heart health, helps
detoxify your body and is
a powerful member of the
cancer fighting crucifer
ous family of vegetables.
It also is loaded with anti
oxidants, helps support
healthy vision and helps
alleviate inflammation in
your body. -
You may have noticed
kale salads are quite the
trend right now. I love
kale salad, but there is a
simple trick to improve
the texture of the kale to
make it more palatable in

Here is the best way to
prep kale for salad: First,
wash the kale and dry it
thoroughly on aclean
kitchen towel. Next, cut
“out the stems and ribs
completely — they are
too tough and chewy.
Tear the dried kale into
bite-size pieces and place
in a serving bowl.
Sprinkle with some sea
salt and using your clean
hands, grab handfuls of
the kale and massage it.
In just 30 seconds or so,
the kale will turn a darker
green and release its aro
matic scent. The kale will
also seem to shrink. Add
other ingredients and
your dressing and enjoy.
Another trick to getting
more kale into your diet
is to toss a handful or two
into your morning
smoothie. You won’t taste
it at all, but you will
receive all the health ben
efits. Here are some reci
pes to help convert you to
the kale club.
Cauliflower kale
soup
1 head cauliflower, cut
into florets
6 tablespoons olive oil

Salt and pepper to taste
1 bunch kale, washed
and dried -
1 onion, chopped
2 cloves garlic, minced
6 cups vegetable broth
or chicken broth
4 tablespoons toasted
pine nuts (or other nuts)
Preheat oven to 425
degrees. Toss the cauli
flower florets with 2
tablespoons olive oil.
Spread out on baking
sheet and roast 25 to 30
minutes until golden.
Remove from oven and
lower oven temperature to
300 degrees. Cut the ribs
and stems off of the kale
leaves and tear into small
pieces.
Toss half of the kale
with 2 tablespoons olive
oil and then spread out on
a baking sheet, being
careful not to crowd the
kale leaves. Cook kale 25
to 30 minutes, tossing
halfway through. Be care
ful not to burn the kale,
Meanwhile, heat remain
ing 2 tablespoons olive
oil in a skillet over medi
um-high heat.
Add onion and cook
until softened, about eight
minutes. Add garlic and
cook another minute. In a
blender, combine roasted
cauliflower, the remain-

ing kale, cooked onion
and garlic and stock.
Puree until smooth.
Return to pot and heat
over medium heat.
Season to taste with salt
and pepper. To serve,
ladle soup into bowls and
top with kale chips and
toasted pine nuts.
Thai kale salad
This is one of my
favorite salads.
Sometimes I make the
dressing without the pea
nut or cashew butter —
it’s delicious either way,
Feel free to use any vege
tables you like with this
salad —steamed green
beans, radishes, cucum
bers, etc.
Salad: :
2 bunches kale, washed
and thoroughly dried
-1 teaspoon sea salt
2 shallots, thinly sliced
3 carrots, peeled and
grated
1/2 red bell pepper,
seeded and chopped
1/2 cup cilantro,
coarsely chopped ;
1/4 cup fresh basil,
sliced into ribbons
1/3 cup cashews, toast
ed and coarsely chopped
Dressing:
1/3 cup cashew or pea

Whisk together dress
ing ingredients. For salad,
cut out the ribs and stems
from the kale leaves and
tear into bite-size pieces.
Place kale in salad bowl
and sprinkle on the sea
salt. . .
Using your clean
hands, massage the kale -
with the salt for 30 sec
onds or so, until the kale
turns a dark green and is
fragrant.
Add in the shallots,
grated carrots, bell pep
per, cilantro and basil.
Toss with the dressing
and then sprinkle on the
toasted cashews.
Pesto is traditionally
made with fresh basil, but
this kale version is also
delicious. You can also
freeze this pesto in ice
cube trays. Once frozen,
pop them out into a plas-
tion with a water sign (Cancer,
Scorpio, Pisces) will refresh your
soul.
SCORPIO (Oct. 24-Nov. 21). You'll
jump into a project in the manner of
the Looney Tunes cartoon character
Tasmanian Devil. In your tornado
whirl, obstacles will be uprooted,
and they never even saw you com
ing.
SAGITTARIUS (Nov. 22-Dec. 21).
With so many distractions of late,
taking back the control of your time
will feel terrific. Though you feel
there’s not a moment to waste on
the mundane, some of it is more
crucial to the big picture than it

Kale pesto :
1 bunch kale, washed
and thoroughly dried °
1/4 cup pepitas (pump
kin seeds)
1/4 cup sunflower seeds
1 garlic clove, minced
2 tablespoons olive oil
1/2 cup parmesan
cheese, grated -
2 tablespoons freshly
squeezed lemon juice
1/2 teaspoon salt
Cut out the ribs and
stems from the kale
leaves. Bring apotof -
water to a boil and add
the kale for just one min
ute. Pour the kaleinto a
colander and rinse with
cold water. Drain well.-
Meanwhile, in a non-stick
skillet, toast the pumpkin
and sunflower seeds until
lightly golden, being
careful not toburn. -
Remove and set aside. ~
In a food processor, add
drained kale, pumpkin
and sunflower seeds, gar
lic, olive oil, parmesan
cheese, lemon juice and
salt. Process, scraping
down the sides until com
bined.
