March is National
Noodle Month, and since
I love noodles of all sorts,
I think we should cele
brate.
I love that you can now
find so many types of
noodles in all sorts of
shapes. You can even find
Asian noodles in many
regular grocery stores, but
I will tell you if you seek
out an Asian grocery
store, you will find a
plethora of types of noo
dles, both fresh and dried.
The best thing? They cost
much less than Asian
noodles at the regular
grocery store.
As far as pasta goes, I
prefer pasta imported
from Italy, which you can
easily find at regular gro
cery stores. Here are
some yummy noodle
dishes to help you cele
brate noodles in all of
their glory.

This is the perfect

roasted tomatoes
2 tablespoons butter
1 small onion, finely
minced
1 ounce prosciutto,
finely minced
1 bay leaf ,
Pinch of crushed red
pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, minced
2 tablespoons oil
packed sun-dried toma
toes, chopped
1 tablespoon tomato
paste
1/4 cup dry white wine
1/4 cup heavy cream
2 1/3 cups fusilli pasta
(or other shape)
2 tablespoons fresh
basil, shredded
1/4 cup Parmesan
cheese, grated
Whirl the canned toma
toes in a food processor
or blender until smooth.
Melt butter in saucepan
over medium heat.
Add onion, prosciutto,
bay leaf, pepper flakes
and salt and pepper, until
onion is soft, about seven
minutes.
Stir in garlic and cook
another 30 seconds. Add
sun-dried tomatoes, toma
to paste and cook another
minute. Stir in wine and

cook until it has evaporat
ed, two minutes or so.
Add tomatoes and bring
to a simmer.
Cover partially and
simmer 10 minutes or so,
stirring occasionally.
Sauce should have thick
ened up a bit. Discard bay
leaf. Stir in cream.
Season with more salt
and pepper if needed.
Cook pasta in plenty of
salted water and when
done, reserve a half cup
of the pasta water. Drain
pasta and pour into the
pot with the sauce. Toss
to combine and add some
of the reserved pasta
water. Add the shredded
basil and parmesan
cheese.
Spaghetti and
turkey-pesto ‘
meathalls
Sometimes turkey
meatballs can be a bit on
the dry side. Not these.
The pesto keeps the tur
key moist and flavorful.
Of course you can make
your own pesto, but store
bought is fine to use in
this recipe.

2/3 cup panko bread
crumbs
1/2 cup basil pesto
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
2 garlic cloves, minced
1 (28-ounce) can
crushed tomatoes
~ 12 ounces spaghetti
1/2 cup grated
Parmesan cheese
In a medium bowl,
combine ground turkey,
panko, basil pesto, salt
and pepper. Roll into
about 16, 1-inch meat
balls. Heat oil in skillet
and working in batches,
brown meatballs on all
sides, about 10 minutes.
Repeat with second
batch.
Remove meatballs to
paper towel lined plate.
Add a little more oil to
the skillet and saute garlic
for 30 seconds. Add
tomatoes and bring to a
simmer. Cook eight to 10
minutes until sauce has
thickened a bit. Add -
meatballs and cook
another 10 minutes, until
meatballs are cooked
through. -
Meanwhile, bring a
large pot of salted water
to a boil and cook pasta
one minute less than the

Soba noodles with
roasted eggplant -
. Soba are Japanese
buckwheat noodles. They
cook quickly — usually
in just four minutes.
Often the noodles are
served cold, so you rinse
them well in cold water
after cooking.
Here the noodles are -
served hot so they are not
rinsed. I have seen soba
in most regular grocery
stores, but as I said earli
er, you can get them -
much cheaper (and have
more of a variety) at an
Asian grocery store.

1/4 cup avocado oil or
vegetable oil
2 pounds eggplant, cut
into bite sized pieces
1/4 cup soy sauce, plus
3 tablespoons
3 tablespoons sugar
2 tablespoons oyster

sauce
1 tablespoon sesame oil
2 teaspoons Asian chili
garlic sauce
1/4 cup sake
10 ounces soba noodles
1/2 cup cilantro leaves
2 teaspoons toasted sesa
me seeds .
Preheat oven to 450
degrees. In a large bowl,
toss eggplant pieces with
oil and a quarter cup soy
sauce. Spread outon
parchment lined baking
sheets — don’t crowd, so
you may need two baking
sheets. Roast eggplant in
oven, stirring occasionally,
for 30 minutes, until egg
plant is browned and ten
der.
~ In a small saucepan, heat
remaining 3 tablespoons
SOy sauce, sugar, oyster
sauce, sesame oil, Asian
chili-garlic sauce, and
saute over medium heat
until sugar has melted and
sauce is warm.
Meanwhile, cook soba
noodles according to pack
age directions until done.
Drain and then add them to
the sauce, tossing well.
Pour into a bowl and add
the roasted eggplant and
the cilantro. Garnish with
the toasted sesame seeds.
