for work on time. They report

treat loaf” recipes that have been developed by housewives
and dietitians.
Meat was once our inafn protein
food. Today we are forced to
secure a portion of our proteins and
carbohydrates from other sources.
cereal, always our standby for
breakfast, is now appearing in

supper tables — and these new
dishes are surprisingly delightful.
For instance, call upon fortified
wheat flakes, the cereal you eat
for breakfast to give you pep. Use
it in the recipe below and place
this “treat loaf” before your family
or guests. You’ll find that a new
meal-time friend has been discover-

Peanut-Rice Loaf
2 cups choppod peanuts
2 cups cooked rice
3 cups fortified whole wheat
flakes
3 tablespoons flour
1% teaspoons salt
2 tablespoons melted butter
% teaspoon pepper
1 cup milk
1 egg beaten
2 tablespoons finely chopped
green pepper .4,^,
% cup diced celery
Combine peanuts and rice.

with flour, salt and pepper; add to
peanuts and rice and mix well.
Stir in milk, egg, green pepper,
celery and butter. Pack lightly in
a very well greased loaf pan; hake
in a moderate oven (375° F.) for
one hour. Let loaf stand 5 minutes
before turning out of pan. Serve
with Brown Sauce.
tYield: 8 servings (5% x Mi-inch ,
pan). £ %
Brown Sauce
4 tablespoons fat
2 tablespoons finely chop: c. J m
% teaspoon thyme
1 bay leaf
*4 cup flour
1 teaspoon salt
14 teaspoon pepper
2 cups meat stock* _
2 tablespoons chopped parsley (if
desired) •'■■of
Combine fat, onion, thyme and
bay leaf and cook over low heat
until slightly brown. Stir in flour,
salt and pepper and brown well; g
add stock, stirring constantly until
mixture thickens and boils. Strain
and stir in parsley. Serve hot over
Peanut-Rice Loaf. j®.
Yield: 2 cups sauce.
♦Note: Stock may be made by
dissolving 2 bouillon cubes in 2
cups boiling water ..^
