munity in garages,, filling sta¬
tions, public buildings, stores,
etc., before and during the Na¬
tion wide Brake-Check pro
gram sponsored by the Interna¬
tional Association of Chhfs
of Police. During the program
police are checking the brakes
of cars involved in moving traf
fic violations and in accidents.
The program started April
and will end June 1.

Needed
The importance and great
needneed of foster homes can¬
not be stressed too much at this
time. There are large num¬
bers of Negro children in this
community in need of substi¬
tute parental care and super¬
vision due chiefly to broken
homes, lack of supervision, ab¬
sence of parents, neglect, death
of breadwinner, ihness and ac-
cidnls.
These children need love, se¬
curity, help, guidance and cor¬
rection so that they may have
an opportunity to grow up with
healthy bodies, sound minds
well integrated personalities.
The Chatham County Depart
ment of Public Welfare will pay
board for these children to per¬
sons in the community or vi¬
cinity who are willing to share
their homes with those who are
less fortunate and help
strengthen the children to take
their part in democracy.

such foster home and would ap

Modern Macaroni Meals

Not so many years ago, about
he only time we enjoyed an un¬
usual macaroni dish was when we
dined With an Italian - American
friend or visited an Italian Ameri¬
can restaurant. True, we used
macaroni or egg noodles in soup
and once in a while served a dish
of macaroni and cheese at home,
but our packages of macaroni,
spaghetti and egg noodles lasted a
long time.
Things have changed. We are
learning to serve this "Energy
Trio" in many ways. We have
learned that macaroni and kindred
products are rich in carbohydrates
and can be turned into low-point,
nutritious meat ■ substitute dishes
at a time when the conservation
of red points is so important.
Macaroni is coming into its own on
American tables.

way! Try the following —- and see
how appreciative the family will

Macaroni - Bacon Caaaerole
Ingredients: ih. elbow maca¬
roni; % small onions sliced; can of
-omatoes, strained through sieve;
I slices bacon; 1 green pepper,
shopped; t cups chopped leftover
meats or chicken; 1 cup diced
;elery, salt and pepper.
Cook elbow macaroni It) minutes
m boiling salted water. Drain. In
frying pan, part-fTy bacon until a
•ight brown. Remove bacon. Saute
•llced onions and chopped pepper
In bacon fat till tender, Add
•trained tomatoes, season and let
simmer 10 minutes. Boil celery in
•alted water 10 minutes and drain.
In buttered casserole, place al¬
ternate layers ot elbow macaroni,
shopped meat ar ebicken, celery

recipe, lf you care to Join the satis¬
fied throng:
, Chocolate Ice Cream
' 1 to lii squares unsweetened
fchocolate; % cup milk; 2 teaspoons
gelatin; 14 cup milk; yi cup sugar,
dash of salt; 2 cups light cream;
1 teaspoon vanilla.
Add chocolate to % cup milk and
heat In double boiler. When choco¬
late is melted, beat, with rotary
egg beater until blended. Place
gelatin in bowl; add >4 cup milk
and mix well. Add hot chocolate
mixture and stir until geiatiu la dis¬
solved. Dissolve sugar and salt In
hot mixture. Add cream and vanil¬
la. Turn into freezing tray of
automatic refrigerator, setting con¬
trol for coldest freezing tempera¬
ture. When partially frozen, re
move from tray and beat with
rotary egg beater until fluffy and
smooth. Return to tray and freeze
30 minutes longer; stir. Then freeze
until firm. Freezing time; 3 to 4
hours. Makes 1 quart.
