Ripe Sour Cherry grid Currant Jelijf
(Makes about It medium glasaea)]
4 (4 cups juice
7 cups sugar
Vv bottle fruit pectin
To prepare juice, stem (do not
pit) and crush about 114 quart*
fully ripe cherries. Crush about 1*4
quarts fully ripe currants. Com¬
bine fruits; add % cup water, bring
to a boil, cover, and simmer 19
minutes. Place fruit in jelly cloth
or bag and squeeze out Juice.
Measure sugar and juice into
large saucepan and mix.
Rring to a boil over hottest Are
and at once add bottled fruit pectin,
stirring constantly. Then bring to
a full rolling boil and boil hard 14
minute.
Remove from fire, skim, poor
quickly. Paraffin hot jelly at once.
Ripe Sour Cherry and Peach Jam
4 cups prepared fruit
7 cups sugar
1 bottle fruit pectin
To prepare fruit, stem and pit
about 114 pounds fully ripe sour
cherries; crush thoroughly or grind.
Peel about 1 !4 pounds fully ripe
peaches; pit and grind or chop very;
fine. Combine fruits.
Measure sugar and prepared fruit
into large kettle, filling up last cup
with water if necessary. Mix well,

hottest, fire. Stir constantly before

bottled fruit pectin. Then stir and
skim by turns for Just 5 minutes
to cool slightly, to prevent floating
