Raspberry Pinwheels
2 caps sifted cake flour; 2 tea¬
spoons double-acting baking pow¬
der; % teaspoon salt; 5 table¬
spoons shortening; Vi cup milk; Vt
cup raspberry Jam.
Sift flour once, measure, add
baking powder and salt, and sift
again. Cut in shortening. Add milk
ail at once and stir carefully until
all flour is dampened. Then stir
vigorously until mixture forms a
soft dough and follows spoon j -j-
around bowl. Turn out on lightly
floured board and knead 30 seconds.
Roil into rectangular sheet, V t
Inch thick. Spread with jam; roll
as for Jelly roll. Cut In 1-Inch
pieces. Place In greased muffin tins
and bake in hot oven (400° F.) 15
to 20 minutes. Serve hot as biscuit;
or serve with cream as dessert.
Makes 12 biscuits.
