Food Favorites for the Fourth
!
BETTY
Here are a few food hints that
will help you prepare some “new"
tastles for the holiday menu —
or for any menu, any time:
Spicy Bran Muffins
\ cup sifted flour
214 teaspoons double-acting baking
powder
44 teaspoon salt
3 tablespoons brown sugar or
granulated sugar
1 teaspoon cinnamon
16 teaspoon allspice
16 teaspoon ground cloves
1 egg, well beaten
cup milk
3 tablespoons melted shortening
1% cups 40% bran flakes
Sift flour once, measure, add bak¬
ing powder, salt, sugar, and spices,
and sift again. Combine egg and
milk. Add to flour mixture, add
shortening, then mix only enough
to dampen flour. Fold in flakes.
Fill greased muffin pans % full.
Sprinkle with Spice Topping, if de¬
sired. Rake in hot oven (425° F.)
15 minutes, or until done. Makes
8 large muffins.
Spice Topping. Mix together 2
tablespoons granulated sugar and 1
teaspoon cinnamon. Sprinkle over
batter before baking.
Salted Peanut Cookies
■M cup sifted flour
14 teaspoon double-acting baking
powder
14 teaspoon soda
14 teaspoon salt
4 tablespoons shortening
14 cup brown sugar, firmly packed
1 egg, unbeaten
-% cup wheat flakes
Is rup chopped salted peannts, with
or without brown skins
Sift flour once, measure, add bak¬
ing powder, soda, and salt, and sift
again. Cream shortening, add sugar
gradually, and cream together until
light and fluffy. Add egg and beat
well. Add flour gradually, mixing
well. Add flakes and peanuts and

They are crisp and crunchy.
Bread Pudding Rennet Desserts
14 cup toasted bread cubes
14 cup raisins
2 cups milk (not canned)
1 package lemon rennet powder
Set out 4 or 5 dessert dishes.
Combine bread cubes and raisins,
and divide among dessert dishes.
Warm milk slowly, stirring con¬
stantly. Test a drop on the inside
of the wrist frequently. When
COMFORTABLY WARM, (110° F.)
not hot, remove at once from heat.
Stir lemon rennet powder into milk
quickly until dissolved — not over
one minute. Pour at once, -while
still liquid, Into dessert glasses. Do
not move until set — about 10
minutes. Chill before serving.
Thrifty Food Tips
A savory way to give new flavor
to thrifty onion soup is to season
with beer. Peel four large onions;
slice thin; cook in 4 tablespoons fat
until soft and golden brown. Com¬
bine 2 cans condensed bouillon and
14 cup beer; add onions. Simmer
covered 45 minutes; season with
salt and pepper to taste. Pour in
soup bowls. Top with toast slices ,
and cheese. sprinkle Yield: with grated Parmesan |

good conservation point also to use !
