ToiuToae—A Nxw Dish.—Shoe ripe
tomatoes as thin as yon oau conveniently,
dip them in floor, both aides, with pepper
and salt; hare some boiling lard ready
in a pan and fry them a nioe brown; then
odd alittle butter if yon like, and serve
hut for breakfast. Some prefer the green
ones done in the same way ; both are a
anbatitute for egg-plants.
Cooxinq OaTueaL. — Oatmeal is not
ncually liked because its preparation is
not properly understood. A correspond
ent of the Amiriean Grocer gives the fol
lowing mode: Mix your oatmeal smooth
in cold water; then pour into boil
ing water, adding a little salt to sea-
eou. Keep this water at the boiling point
for two hours, and just before it is thor
oughly cooked add a little milk to thicken
and improve the flavor. Stir thoroughly
at intervals. If you weut to make out
cake, knead a oup of oatmeal, roll it out
thin, and out it in squares, then bake in
an oven. To be served cold and bat
tered.
—Cranberry sanoe is the great Ameri
can dish,and the most popular one for gen
eral use,either for dinner or tea. As a relish
with game, poultry and meats of all kinds
it is unequalled. To every pound of fruit
add three-quarters of a pound of sugar
and half a pint of water. Stew over a
moderate but steady fire. Be careful to
cover and not stir the fruit, but occasion
ally shake the vessel, or remove to a gen
tle beat if in danger of sticking or burn
ing. If attention to these particulars be
given, the berries will retain, to a consid
erable extent, their shape, which is de
sirable, and adds greatly to their appear
ance on the table. Boil from five to sev
en minutes, when they should be removed
from the fire, turned into a deep dish and
set aside to cool. If to keep, they can be
put up at once in air-tight jars.
Nubsibt Applk Podding.—Grata some
stale bread into a battered dish, strew
upon it a layer of sliced or obopped ap
ples sprinkled with sugar. Alternate
crumbs, apples and sugar until the dish
is full; then cover with crumbs and some
small pieces of butter; moistened with
milk, put iu the oven, and bake a light
brown.
—From Stockholm comes the announce
ment of the discovery of a new ex
plosive agent culled vigorite. Eight
onnoes accomplished by experiment
what would have reqnired double the
quantity of dynamite.
—Carboleum ia the name of a new Ger
man motor to be need in the place of
steam. It is produced cheaply, it is said,
from chalk, whioh is heated in a close
apaee to 800 degrees Fahrenheit. Carbo
leum is said to be not dangerous as an
explosive, and to require leas heat for its
application lo machinery than steam.
—It has been notioed that several ships
laden with English ;ooal and bound to
Paciflo ports, have lately been burned at
sea, and it is supposed that the fires were
spontaneously generated. Capt. Knowles,
of the ship ’’Glory of the Seas," which
reeently arrived at Ban Francisco, reports
that the vessel narrowly esoaped destruc
tion by fire. He was compelled to keep
the hatches off almost all the voyage to
give ventilation, and on several occasions
the steam from the coal could be seen
coming from the hatches. The men and
offloers report that the coal was at times
so hot that it could not be held in the r
hands for a moment. It is supposed that
an unusual quantity of sulphur is present
in the strata of coal from whioh the
latest oargoes were taken.

shine.—It doea not seem to be very gen
erally understood that the amalgam of
tin-foil with mercury, which is spread on
glass plates to make looking-glasses, is
very readily crystalized by aclinio solar
rays. A mirror hung where the sun can
shine on it is usually spoiled; it takes a
granulated appearanoe familiar to house
keepers, though they may not be ac
quainted with the asuse of the obange.
In such a state the artiole is nearly worth
less, the oontinnity of the surface is de
stroyed, and it will not refleot outlines
with any approaph to precision.
Substitute fob Btxam.—The possibil
ity of employing oarbonic acid as a motor
—the suooessor of steam as it is termed—
has been discussed at considerable length
by Dr. Beins in the London Chemical
Newt, the article beiug reproduced quite
generally by the scientific press. Dr.
Beins considers that he has discovered a
very oheap way of produeing oarbonio
acid in a liquid state, end consequently at
high tension. Thus, when natrium bicar
bonate or the corresponding salt of kalium
in a dry pulverized state or in a watery
solution is heated in a dosed apace, a part
of the carbonic acid ia given off anil con
densed in a non-heated portion of that
space, so that, at a temperature of from
636” to 843° Fab., liquid carbonic acid,
says Dr. B., oan be distilled out of those
salts with a tension of from fifty to sixty
atmospheres. This liquid carbonic acid
or carboleum, as it is called, it is pro
posed to use to develop gas with which
engines are to be driven instead of by
steam as at present, and further experi
ments with a view to the accomplishment
of this purpose will be looked forward to
with much interest.
Keep the Feet Wabm.—Many of the
colds whiuh people are said to oatch, com
mence at the feet. To keep these ex
tremities warm, therefore, is to effect an
insurance against the almost interminable
list of disorders which spring out of slight
colds. First, never be tightly shod.
Boots or shoes, when they fit olosely press
against the foot, and prevent free circu
lation of the blood. When, on the con
trary, they do not embrace the foot too
tightly, the blood gets fair play, and the
spaces between the leather and the stock
ings are filled with a comfortable supply
of warm air. The second rule is—never
sit in damp shoes. It is often imagined
that unless they are positively wet it is
not necessary to change them while tho
feet are at rest. This is a fallacy; for
when the least dampness is absorbed into
the sole, it is attracted further to the
foot itself by its own heat, and thus pers
piration is dangerously checked. Any
person may prove this by trying tho ex
periment of negleoliog the rule, and his
feet will become cold and damp after a
few moments, although taking off the
shoe and warming it, it will appear quite
dry.
Cold Powi.eb.—We have long been in
the habit of using what we eall a cold pow
der, which we have found of great value
in breaking up oolds when taken in time,
and in modifying their foroe when taken
late.
The prescription is as follows: Cam
phor, five parts. Dissolve in ether to the
consistence of cream, then add carbonate
of ammonia, four parts ; opium powder!
one part. Mix and keep iu a tightly
corked bottle. The dose is of course
tegnlated by the opium, and ranges be
tween three and ten or fifleen grains. We
have been aconstomed to prescribe it for
onr friends by the finger-nail full, or as
mnoh as one can put on the finger-nail.
This powder may betaken in a little water
just before retiring, by preference, or at
any hour of the day, whenever there is a
suspicion of having caught cold. If need
he, a moderate dose may be taken several
in succession.
The advantages of this powder are very
great :
1. The taste is agreeable, ;r, at least,
la not disagreeable. Even the bitterness
of the opium is mostly neutralized by the
oamphor and ammonia. No child objeota
to this powder.
2. It is singularly and inexplicably effl
cacions. We believe it to be more effl-
oient than Dover's powder, and incom
parably more agreeable. In some oases
it prodnoee a gentle perspiration; in oth
ers, this Bpaoial effect is not observad. It
is so easy to take, and so harmless in
small doses, that it is well and safe to
take it whenever we beoome badly obiiled.
