A Valuable Plant.
My attention was some time since
called to the claims of “Ivory wheat”
and “Millo Maize” to a place in our
longlistof profitable food crops. These
are both members of the large family
of Sorghum of the class that have
been long cultivated in Central Afri¬
ca and other tropical countries for
bread purposes. It is not here claim
ed that their introduction into this
country is very recent, or that public
attention has not been before called
to them. 11 has been my purpose
to investigate both in the laboratory
and in the field, as well as in the
kitchen, their qualities. I therefore
not only directed Prof. White to
make the foregoing analyses to show
the relative theoretical value of these
grains as c m ated with our ordinary
standard wheat, but have distributed
small quantities of the seed of Ivory
wheat and Millo Maize to careful far¬
mers throughout the State in order
to test their productiveness and their
special capacities to withstand heat
and drought.
The analyses speak for themselves,
showing that there is scarcely more
diiference in the proximate analyses
of “Ivory wheat,” so called, and Dal¬
las or Red May, than appears be¬
tween the analyses of the latter two
varieties of ordinary wheat. The
Ivory wheat shows a larger percent¬
age of albuminoids (flesh formers),
slightly less of starch and more of
fats (fat and heat producers) than
either of the true wheats. The Mil¬
lo Maize has considerably less of the
albuminoids, or flesh forming sub- j
stances than either of the others, be- j
ing a rout equal to Indian corn in j
this respect.
The flour made from the Ivorv
wheat, when properly ground and
bolted, is rather darker than ordinary
family flour, but possesses the prop
erty of kneading well, and is there
fore adapted to the process of “rais
ing” with yeast or by similar means,

unpalatable, and as indicated by an
alysis is probably fully equal in nutri
tiveness to any. For making the
forms of bread for which buckwheat
flour, rice flour, middlings of wheat,
etc., are usually employed, viz: waf¬
fles, griddle cakes, muffins, etc., the
Ivory flour seems specially adapted.
1 cannot speak from actual experi¬
ment of the bread qualities of the
Millo Maize, but I am of opinion
that in this respect it will be found to
resemble Indian corn meal. As al¬
ready stated, it is claimed that both
of these plants are enormously pro¬
ductive, rather indifferent as to soil
and culture, and almost independent
of the seasons after the soil has been
prepared and the crop started off.
Owing t j the extraordinary seasons
of this year, it has not been practi¬
cable to test their capacity to resist
drought, and a sufficient number of
reports of experimenters have not
yet been received to form any deci¬
ded conclusions in reference to pro¬
ductiveness under ordinary circum¬
stances. But I am of opinion that
the reports will show that, both are
very productive—far more so than
any grain crop now gi own in this
State. The Millo Maize is quite late
in maturing, requiring favorable cul¬
ture and full culture from planting
time (April), until frost to mature in
North Georgia; but this difficulty will
probably soon yield to the acclima¬
tizing effect of planting home grown
seed a few years. This plant appears
to be productive of foliage, will bear
two or more cuttings, and promises
to be veiy valuable for soiling and
general forage purposes.—Commis¬
