GEORGIA EGG COMMISSION
MISS MILDRED HUFF. HOME ECONOMIST .
ATLANTA (PRN) — Make your New Year’s resolution a
good breakfast 336 days in ’72. The latest statistics show that
Americans consume twice as many sweets as protein foods! No
wonder so many people are overweight and undernourished!
Since it is tempting to sleep those extra five minutes, make
breakfast easy on yourself. Start the morning with something
simple. How about “Hot Dog’n Eggwiches”?!
Quick to make, breakfasts in a bun can be eaten on the run if
the kids poke around while dressing, leaving no time for a seated
meal.
Practically all youngsters like hot dogs and when they are
combined with scrambled eggs, the result is a nutritious, high
protein breakfast. (Plus you can use up those few,
always-ieft-over, hot dog buns).
All family members, young and old alike, need early morning
energy to get going, but not the kind that suddenly lets them
down in mid morning. A well-balanced breakfast includes foods
from each of the Basic Four Food Groups. These groups are the
meat group (eggs, meat, poultry and fish); the milk group; the
fruit and vegetable group; and the bread and cereal group.
When planning breakfasts, remember that although bacon
and sausage are classified as meats, they contain primarily fat,
very little protein.
To make a balanced breakfast with “Hot Dog’n Eggwiches”
you need only add a glass of milk and an orange. The orange
doesn’t have to be eaten with the rest of the breakfast. The
youngsters can take it to school and eat it during morning
recess.
HOT DOG’N EGGWICHES
1 frankfurter, thinly sliced
2 teaspoons butter
2 eggs
2 tablespoons milk
'A teaspoon salt
Dash pepper
2 buttered frankfurter buns
Lightly brown frankfurter in butter. Mix eggs, milk, salt and
pepper - mixing thoroughly for a uniform yellow, or mixing
slightly if streaks of white and yellow are preferred. Pour egg
mixture over frankfurter. As mixture begins to set at bottom
and sides, gently lift cooked portions with a spatula so that the
thin, uhcooked part can flow to the bottom. Avoid constant
stirring. Cook until eggs are thickened throughout but still
moist, about 3 to 5 minutes. Spoon onto buns. Makes 2
sandwiches.
