THE COW’S IXTULUOEXCE.
That cowb hav« memory, language,
'signs, and the means of enjoying
plensant associations, or combining
for aggressive purposes, have been
recognized, but scarcely to the extent
the subjects merits. Travelling in
Italy, some years ago, the writer vis
ited some of the large dairy farms in
the neighborhood of Ferrara. Inter
spersed amongst much low-lying un
healthy land, remarkable for the pre
valence on it of very fatal forms of
anthrax in the summer season, are
fioe undulating pasture lands, and
the fields are of great extent The
writer happened to stop at a farm
house one tine afternoon when the
cows were about to be milked. A
herd of over a hundred were grazing
homewards. The women took their
positions with stools and pa. s close
to the house, and as the cows ap
proached, names were called out,
which at fm»t we thought were ad
dressed to the milk-maids. Rosa,
Flort n/.a, Giulia, Sposa, and many
other names which were noted by life
at the time, were called out by the
overseer or one of the women, and
the writer was ustonished to see cow
after cow cease feeding or chewing
the cud, and making direct, some
times ut a trot, for the woman that
usually milked her. The practice, we
found, was not confined to one farm ;
all the cows on each farm knew their
respective names, and took up their
positions in the open field just as
readily as the individual members of
some largo herds iu this country
turning from tho fields tako up their
places in the sheds.
USE OF THE THERMOMETER.
We trust that it will not be long
before every intelligent mother of a
family is familiar with the use of the
thermometer, the discovery of dis
ease. In many respects it is far
more reliable than the tongue or the
pulse. Asa means of ascertaining
when it is desirable to consult a doc
tor, and when advice may be defer
red with safety it would be valuable.
By its aid the difference between
insignificant skin-rashes, which will
disappear in a day or two, and those
which imply a constitutional fever,
may usually be satisfactorily deter
mined. Under many circumstances,
the early discovery that a child was
sickening from scarlatina or measles,
might be of great importance.
If a mother were in the habit of
trying the temperature of her chil
dren whenever she thought them
ailing, she would somotimes make
unexpected discoveries as to their
real state of health ; and her obser
vations would be of much value to
her medical adviser. At the same
time she would be acquiring fami
liarity with the mode of estimating a
symtom to which during acute ill
ness, great attention is paid, and
fitting herself for one of the duties
of a skillful nurse.
Tho clinical thermometer is not
expensive, and its use may be easily
learned by any one—We hope that
before long a few brief rules adopted
for home employment will be prepar
ed ; and that aided by them, the
mothers and nurses of our laud will
at once commence the acquisition of
a kind of experience which will be
come of increased importance. In
addition to its practical value in re
ference to the health of their house
holds, we must also add that all who
become familiar with the facts of
human thermometry, must learn
some very interesting lessons in
physiology.

Speedy Growth of Radishes.—
In the publications of the Acclimati
zation Society of Palermo, we are
informed that radishes may be ob
tained at any season, and very quick
ly in the following manner: The
seeds are to be first soaked for twen
ty-four hours and then placed in
bags and exposed to the sun. They
will begin to germinate in about
twenty-four hours, and are then to
be set in a box filled with well-man
ured earth, and moistened from time
to time with lukewarm water. In
five or six days the radishes will at
tain the size of a small onion. To
grow radishes in winter, the box is
to be placed in a warm cellar, cqveir
ed with a top, aifd the earth mois
tened from day to day with luke
warm water.
How to Roast a Turkey —Dress
in the usual way, but remove the
crop with the fingers at the neck
without cutting: Cut as small a
a place as will do to remove the in
wards. Prepare a stuffing by cut
ting in small pieces half of the neck
bone, liver, gizzard, heart, and a
slice of pork; boil half an hour in a
quart of water and season with salt
and pepper; add to this half a loaf
of wheat bread sliced thin and rub
bed fine. Wash the fowl, and while
wet rub salt and pepper over it with
your hand. Tie the neck and put
the stuffin in at the other opening,
pushing enough of it in through into
the crop to fill. When full sew up
the opening, put the fowl in a drip
ping pan with a pint of water, roast
in the oven about two hours, turn
ing carefully once or twice, and
dripping the water orer it frequent
ly. An old turkey or a hen should
be cooked about a half a day.
The number of hogs that have
been slaughtered in Nashville, by
three houses since the opening of the
present packing season, aggregates
about 8,300 hands. Average Weight
from 259 to 300 pounds.
To Cut Glass. Any hard steel tool
will cut glass with facillity wheu kept
ilreely wet with camphor dissolved
in turpentine. The ragged edge of
glass may alse be thus smoothed
with a flat file.
Since the late war in France com
menced glove making in England
has largely increased and there are
10,000 persons now engaged in that
ndustry over the kiugdoom.
