ALL ABOLT COFFEE.
In the following we find some very'
useful hints on using coffee—only one
thing we will add, never use “ground,
browned or prepared coffee,” for there
is room for deception that ought not
to be risked.
Java coffee has a large, full, yellow
berry, while that of the liio is
Btnullor, and of a greenish tinge. The
difference in essential properties is de
rived from the difference in climate
thut of Java retaining the fc-can to rip
en more perfectly than it is left to do
in B: azil, where it is raised chiefly by
unskilled slave labor. The best coffee
for farmers is mado by mixing the
two—Java affords the most fragrance,
and K;o the most stimulant und pro
tection against chilliness and damp.
Very much depends upou the parch
ing of coffee. This should be done
slowly ut first to expel all the mois
ture, and rapidly at last, stirring it
constantly so thut it will be uniformly
browned, and not be burned in the
least. When it fi.uj an oily appear
ai.ee, and is ol u light brown color, it
should be removed at once from the fire
and | ut into a close vessel.
We huve tried u great muiiy ways of
making coffee pots; but for family use
we have never founu anything better
than a good block-tin pot, und the
while of an egg to clear tho beverage.
We grind two table-sp mnfuls to a
person, put it into the pot, and the
white of Ml egg and sufficient cold
water to moisten the whole, stir it to
gothi r and let in warm on the stove,
theu pour on boiling water and let it
boil two or three minutes only, unless
those who drink it have been exposed
to cold or damp, or are anticipating
such exposure. In that case it should
leumiu over the fire fifteen or twenty
minutes, long enough to extract borne
of the bitter principle which is of the
nuturo of quinine in its effects upon
the system.
Coffee grounds should never be al
lowed to stand in tin, but should be
poured out and the pot carefully
cleansed as soon as it is used, else the
tlavor of the next beverage made in it
will bo impaired. Si,ft water is much
moie preferable to ht.rd for making
coffee, as the mineral salts in the lat
ter often combine unpleasantly with
the constituents of the coffee, and give
it an uerid taste. 'J here is no reason
why our tables should be so frequent
ly disgraced with muddy, bitter, riloy
coffee, when a little cure and skill can
iuruish a bovernge aromatic, exhilara

it. The green sod should be left un
touched by the plough until the clo
v< r or grass is two or three inches tall
m the spring. Tito sod should be
turned under just before it i» time to
l lant corn. The worms then feed up
on the young grass, and the roots of
the gruss and the corn escapes.
This practice will hold good even in
regard to broom-sedge. If an old field
L burned off during the winter, and
> fter the grass has taken a good start
in the spring, it is turned with a good
two-horse plow, then harrowed, the
g.ound laid off in drills the way the
land was plowed, and corn planted
and manured in the drill with some
fertilizer containing a large proportion
of Amonia and Potash, the crop will
surprise any one not familiar with this
method of culture. If the sod bo in
verted deeply and the red clay is turn
ed up, and the ground is not manur
ed, the crop will be a failure. There
[must be some stimulant used in the
[drill to start the plant. Afterwards
the decaying sod underneath will re-
I tain moisture and afford manure suffi
cient to yield a handsome crop.—
Plantation.

understand. They invariably wear

not unfrequently beforo the other
parts are a quarter worn. Children’s
.shoes with silver or copper tips never
wear out at the toe, and last twice as
long. Remember this.
The “ Scientific American ” says it
is now “ impossible to construct a bur
glar-proof safe—for the thief, with his
cylinders of compressed hydrogen and
oxygen, can, in a few seconds, barn
holes of any size in the hardest metal
—his fire drill enabling him, in a few
minutes, to work his way into the
strongest safe that was ever construct
ad.”
To Cure Sor,E Throat. —Take (he
whites of two eggs, and beat them
with two spoonfuls of white sugar;
grate a little nutmeg, and then add a
pint of lukewarm water. Stir well
iud drink often. Repeat the prescrip
tion if necessary, and it will cure the
cnost obstinate case of hoarseness in a
ihort time.
To Keep Better.— A writer in the
Searth and Home wraps each churn
ng separately in rags dipped in strong
irine, and packs it in a box or barrel
if dry salt. It does not become too
ialty, and is as good in winter as when
lew.
