HOW STARCH IS faALE.
Process by Which It Is Washed Out or
the Potato Pulp.

upon the wa.- e in them. One fac
tory in Maine is turning out an
average of eight tons of starch
every twenty-four hours, running
two shifts, seven days in the week.
The potatoes are hauled into the
upper story of the plant and dump
ed into bins. In a passageway be
tween the receiving building and
the machinery building a man sits
and feeds the potatoes with a wood
en paddle into the long chute from
the bins behind him and round him.
The potatoes are carried through a
revolving tube under a heavy pres
sure of water from three streams
pumped from the brook. They re
ceive a thorough washing before
they pass on to the grater.
The grater is a cylindrical tube of
iron with a casing of wood, forty
two inches long, twenty inches in
diameter, over which are nailed
thin strips of iron, perforated, mak
ing a surface like a file, which, pass
ing very close to the falling pota
toes, grinds them as the cylinder
revolves.
From the grater the potato pulp
passes over a constantly moving
screen, upon which three streams
of water fail, the starchy material
being washed through the screen,
and the waste pulp is shaken off
the screen into a trough, whence it
is carried away. From under the
screen the starch and water is car
ried through a network of troughs
of several lengths and levels into
four large vats. The irregular
starch granules sink to the bottoms
of the vats, forming a white, sticky
paste.
The full vats are left until the
next morning. When the starch has
settled the water is drained off into
the smaller vats, where it receives
an agitating and then is allowed to
settle. It leaves a small deposit of
starch.
The starch is now shoveled from
the large vats into the small vats
and agitated a given time by the
watch in fresh water, allowed to set
tle, and the water is again drained
off. The starch is then shoveled up
in baskets and drawn up to the
second story.

zon. to where it debouches in a
mouth forty miles wide into the At
lantic is 4,000 miles. The story is
told of a wrecked vessel which was
drifting, with her crew on board
suffering intense torment for lack
of fresh water, which entered the
mouth of the Amazon and the suf
ferers could have had fresh water
simply by putting a bucket over the
side, but did not know where they
were until they got in sight of the
land. This mighty river, up which
the tide goes 400 miles, is known in
the upper part of its course near
the Andes as the Maranon, then in
the middle course, from Tabatinga
to the mouth of its chief affluent,
the Rio Negro, as the Solimoes,
while for the rest of its course its
name is Amazonas or Amazon. A
thousand miles from the sea it is
four miles in width.
Fitz Gerald’s Vision.
Edward Fitz Gerald, who was
among the least superstitious of
men, once had a similar experience
to that of Captain Marryat. The in
cident is recorded in “Tennyson and
His Friends.” Fitz Gerald “told a
story of a vision; how he had one
day clearly seen from outside his sis
ter and her children having tea in
his dining room. He then saw his
sister quietly withdraw from the
room, so as not to disturb the chil
dren. At that moment she died in
Norfolk.”

Mere restlessness is not a matter
for which physicians are often con
sulted. It is on the face of it an
unimportant malady, but when it
exists in sufficient intensity to form
the subject of complaint and to in
duce the sufferer to seek advice it is
usually found to be the superficial
indication of a grave underlying

Fire at Mr. Culpepper's.
A fire originated on the roof of
Mr. M. N. Culpeppers's home, on
South Green street, Monday after
noon, from sparks blowing onto the
roof. The fire company responded
promptly and soon had the blaze
under control. The house was
damaged about $5.00.
Back After Vacation.
Miss Maude Whelchel has re
turned to resume her duties at the
Newman - Frierson - McEver Co's
store after a vacation of two months.
Miss Whelchel will be glad to have
her friends call and see her at any
time.
