Mow Koch Milk to a Pound of Butter I I obtained a report of seven butter factories in New* York, representing 108,878 poitwd- at' butter per anumn, from 800 cows; from these I found ‘that a careful average sliowed that one pound of butter required twenty three and one-ha l / pounds of milk ; it was also evident that either there was a difference in the quality of the milk furnished to the different fac tories, or else in the perfection of the plan pursued by each one in separa ting the butter, for these averages varied from twenty pounds of milk at the Davis Factory, Herkimer Cos., j to twenty-five at the Berry Faotory, at Malone. The Davis factory is essentially a cheese factory, but by an accident to their boiler, they were compelled to convert one day’s delivery of milk into butter ; this amounted to 4,000 pounds, and to the surprise of those engaged in the manufactory, made 200 pounds of first-class batter. The Keeler factory reports an average of twenty and three-quarters pounds of milk to each pound of butter. The Kngil factory reporls one pound of butter from twelve quarts (wine measure) ot milk. Experiments with my own dairy of twenty cows, during the last month, have convinced me that one pound of butter from twenty-three pounds of milk is a fair average, and yet I could select individual cows from my dairy, whose average would require much less milk. It Ss; but reasonable to suppose that, other items being equal, it would require more milk to make a pound of butter iu June, than in December; that the snme comparison will hold good with regard to the milk of a fresh cow, and one nearly dry; and also, with a cow kept on dry fodder and meal, and one fed altogether up on clover, though I have not found green corn to decrease the average of butter in anything like the proportion that good clover pas ture will.— Journal of the Farm, Security of Farm Labor. Farm property is secure iu yield ing constant and remunerative labor. When a man hears that he can earn say $3 per day in a foundry or fac tory, he says to himself that is #OOO |Kr year—perhaps half the value of Ills farm; he fancies he can live upon 4500 and save the balanoe, and so Infers that It is better than farming. But living in connection with manu facturing, cannot be reckoned in this wholesale way. Setting aside idle days, sickness, accident and cessa tion of work that detract from pay, the future of labor in trades is dark and unpromising. The antagonism between labor and capital in this oountry is a fixed foot, whether the oretically there can be suoh an an tagonism or not. It is not without significance that the International society is to have its headquarters in New York instead of in Europe. Hits antagonism will not doorcase. Whatever its issue, it will render the life of the workingman for the next generation miserable and uncertain by the contention in which he will be necessarily involved. It is said that the strikes are ended; Ido not believe we have seen the beginning. Hie only certainty before the labor of shops and factories, is breaks, fluctuating wages and general uncer tainty. It oannot reckon on unbroken time and steady wages. Swammino Bkjob. A beo-koeper givea the following plan to prevent a swarm of bees from getting far away from the hive, with the statement that after ten years experience he has never known it to fail once: As soon as they show the first symptoms of swarming, stop up most of outlets of the hive so as to force them to be a considerable time coming out. The swarm being made up in part of young bees, many of whom oannot fly well, and as nothing can be done by the awanu until aU are out, they fly about in the air; by prolonging their exit the feeble ones beeome tired, and finding their plans frustrated, they alight to re-arrange their journey. If they can leave the old hive all at once, they care very little about alighting. —Journal of the Farm.
