Mr Editor: —Notwithstanding the O ttftdue prominence which is given, at our fairs mid agricultural exhibitions, to running ami trotting horse>, and notwithstanding the thousands of dol lars annually squandered in horse pro mi nuts, and carried away by the gen tlemen of the turf, less attention is paid in the cctti n Stans to the breed ing and rearing of good colls and nmles than in auy other part of the United Slates. It is notorious that the greater number—l might :av, all—of our fine mules are imported from the West. Millions of doll, rs are sent out of the Stile of Georgia every year to buy mules. Whenever you happen to see a fine horse or none, you invariacly find, on inquiry that it has been imported from the North or West. If our premiums for horse shows are leallv in endrd, as the manager of our fairs protend, to encourage and improve tl e breed ing of horses and mules, it must be admitted that our efforts, though well intentioned, Lave not been suc cessful. There is no reason in the vvoild why the breeding of good horsee and mules should not be as sncessful and profitable in Georgia as it is in Kentucky or any other State. It on ly needs attention and the selection of good animals to breed from. When one of our farmers has a mare that is good for trotting, be sends her to the nearest cross-roads stallion to “raise a colt.’’ The result is the miserable runts wo see all over the country. Now, if vve would only take the same pains in selecting breeding animals that we take in obtaining cotton seed —selc ting none but those possessing good qualities, as to blood,size, shape, and color, strong constitution, shoit back, large girth, long Lel!v, clean fi ll legs, good etes. and fi-i.o action w e could have as fine hroses as any other people. With similar care in the selection, #« could also raise all our own mules. I do not want to raise “thorough bred” stock. 1 have no use for race horses as such; nor have 1 any pre delection for skeleton buggies and “2:40 over a dirt road.” But good blood is indispensable to the raising of good stock. Pedigree is of great value, and should not be disregarded in either sire or dam. 1 see a great deal of writing about Ayrshire, Devon, and Durham cattle, Merino and Cots-wold sheep, and Berkshire and Essex hogs, but rarely see a line writen about any improve ment in the breed of horses. I re joice to see the movement for better stock. I hope it will go on until it becomes universal; but I wish to see something done for horses and mules to enable us to supply our plantations with the necessary stock without Bonding our money out of the State. Ilorse racing, trotting, and pre miums to jockeys, will never secure the desired end. Let us Luv good well bred mares; let a neighborhood purchase a fine stallion or jack; and let us subtract from cotton land enough to supply us with aplenty of hay and small graiu. Kpstudh. The Okcuaud —We believo that this month and tlie early part of De cember me the best time for trans planting fruit trees. Trees are a sleep then or nearly so, and, if ordina ry care- be taken, are scarcely affected by the change. Pruning in ay be ad vantageously done now, before the hard frost sets in. If your fruit trees have not been already thoroughly searched of borers and worms, attend to them without delay, before they get established for the winter, when it will be hard to End them. Destroy all webs and coboons banging to the branches or baik. Manure your orchard by spred iug for a circle of ten feet all round the trees, a compost of rot'ed vaid manure, muck and ashes. Sow all see IS of fruit trees. Soda Cake. —One coffee cup of white sugar, half tea cup of butter, beat together till like cream, then add two well beaten eggs, one tea spoon of cream tartar, half tea-spoon of soda dissolved in half tea cup of mill, and oue coffee cup and a half of flour; spice to the taste. jar When strawberry plants are set out in the spring, if they manifest a dispositon to bear the same year, pinch off the blossoms.
