Preparation ami Enrichment
of Soil for Fruit Trees.
President Wilder, in his most ex
cel lent and eloquent address at the
late meeting of the American Porno
logical Society, laid great stress on
the necessity for thoroughness of pr« p
ftrntion and adequate fretilization of
the soil in fruit growing. lie said:
It seems scarcely necessary in this
piesonee In s?i v that thorough
preparation and enrichment of
such soil as are not alieadv
rich, is essential. Ordinary farm
cultuie will not produce the
highest class of fruits; they must have
garden culture, snd with this they
never fail. After this thorough prep
(nation, the demer the culture the
better, at least in our older States,
where (he soils have been depleted
by cropping. Hut one of the lessons
which experience has taught ns most
impressively is that, contrary to our
former views, this after cultivation
should be shallow so ns not to injure
the mots, l*nt to preserve them near
the surface.
The subject of manures is a most
important one, and every year be
comes more so. The supply ol ma
mire in the older part of our country
is unequal to the demand, and every
}ear increases the disparity. What
would be our feelings if the supply
of wheat, on which we demand for
oiii dull} bread, were inadequate to
the demand? Yet men are not more
dependent for life upon their daily
bread than are our fruit crops upon
the food which is supplied to
them in the form of manure of one
kind or another. To supply this
want we shall he compelled to rely in
a great measure upon artificial fertili
zers, and chemistry has not yet
taught us, as it will doubtless in the
future, how to supply the wants of
our fruit crops with certainty and
abundauce. But we cannot too often
or too foicibly impress upon the
minds of all cultivators the sacred
duty of saving every particle of fer
tilizing material and applying it in
such manner as will produce the ut
most effect. And on this last point
the lesson which has taught
11s is, that manure applied to fruit
trees should be either in the form of
a top-dressing, or as near the sur>
face as is consistent with the compo
sition of theßoil, and the preservation
of its fertilizing elements.
Ground-pe‘B for Hogs, <fcc.—
All fanners are anxious to have plen
ty of hogs and to ha vo them fat, and
to have plenty of cattle, and to have
them fat. Now to this end, we must
have plenty of food, and get it cheap.
For these purposes, 1 will bring for
ward the ground-pea or pinder, which
has, in my experience, proven itself
to be the best food for fattening hogs,
that I hare ever tried or seen tried.
They aro much cheaper for this pur
pose than corn, peas, pumkins, beets,
01 carrots. The three last named have
never proven themselves sufficient
to fatten hogs at all in my hands. I
have known 75 bushels of pimlers
made on one acre of land, and have
ofton heard of 50 bushels being gath
ered from an’acre, and never calculate
on gathering less than 25 or 30, if
propel ly cultivated and gathered at all
Finder vines, if properly cured, is
better feed for cattle, mules or horses,
than fodder, shucks or crab-grass hay.
I must however forboar at this sit
ting, going into a detailed account
of soil and cultivation and gatheiing
of a crop of pinders; and also why
1 think corn or cotton grows better
after pinders, tnan if the land had

Potato Pan Pib. —Take four or
five Urge sweet potatoes, cut in
small pieces, and boil till cooked
through; pour off the water and put
them in a baking dish; then put in
three heaping tablespoonfuls of sugar,
a tablespoon fulbulter, a little nutmeg,
and last, a cup of cold water,
Make a crust like pie-crust, only
thicker, and just large enough to
cover the dish; cut a slit in the crust
and put it on top the potatoes, and
bake till a light brown. This dish is
not a fancy one for a light dessert,
but a good, substantial part of a
meal, and is pronounced excellent.

the following as the best mode of
keeping meat fresh: (Jut the meat
in slices ready to fry. l’aek it in
jars, in layers, sprinkling with
salt and pepper just enough to
make it palatable. Place ou the
top a thick paper or cloth, with
salt half au inch thick. Keep this
on ail the while. Meat will keep
perfectly good for three weeks in
summer by this method.
