the circulatory system, and stimulates
digestion. A cop of coffee, taken
after a hearty meal, will often relieve
the sense of oppression so apt to he
experienced, and enable tbe stomach
to perform its functions with com
pai.alive facility In medicine it is
a valuable remedy when there is a
tendency to stupor or lethargy, depen
dent on deficient energy of the brain,
congestion or inflammation; also for
many condition ol the nervous system
resulting from prostration. Its his
tory is pioof of its safe and harmless
■attire when used in a proper man
ner.
Fen readers require to bo told that
«■ offer* is a seed of a tree or shrub,
growing from ten to fifteen feet in
height, and indigenous to Arabia and
the adjoining parts of Africa, but
extensively cultivated in Asia and
America. It was used very general
ly in Persia as early as the ninth
century, and in 1;>17 was introduced
by the Turks into Constantinople,
w hence it was carried to France and
England about the middle of the
succeeding century. From a chem
ical analysis we obtain a so-called pe
culiar codec principle, upon which
the flavor of the coffee depends, and
gummv, mucilaginous and resinous
extracts. The peculiar cofioe prin
ciple consists of caffeine, essential
and aromatic oils, etc Some of these,
caffeine, are extracted from the green
seed by maceration in water; while
others, as the aiotuatic oils, require
the roasting process in order to
develop them. The aromatic oils
of pure coffee are tenaciously retained
by the fatty oils, and are only freed
by tho application of beat.
Having shown the value of coffee
as a wholesome : timuhiting beverage,
it only lemains to point out the
best mode of preparing it. The
common method of extracting tiie
valuable properties of coffee by boil
ing is now discarded by all who hare
a dear conception of the nature of
tho article. The greatest care should
be observed in the process of roast
ing tho cofiee, as upon that depends
its flavor and stimulating qualities.
Fresh sweet seeds should be selected,
placed in a covered vessel over a mod
erate fire, and stired continually
until they have, acquired a chestnut
brown color, when the process should
cease. If too long continued, it ren
ders the - cofiee bitter am! acrid, or,
by reducing it to charcoal, deprives
it entirely of its flavor. Everything
else being equal, fresh ground berries
make the best coffee. \\ hen a cup
or larger quantity is desired, boiling
water at its liigbtest temperature,
should be showered upon it, the
aroma being secured nnj retained by
a water-joint made hr the urn or
other vessel in which the coffee is
prepared. The watorjoint should
make the receptacle for the cofiee as
nearly steam tight as is consistent
with perfect safety, Bv this process
the aromatic oils aio extracted and
rotarned, and not dissipated and
wasted, as they always will he by
loiling, lly using the water joint
to which wo hare alluded, the steam
is condensed aval thiown back into
the body of the vessel containing the
coffse, retaining the aroma or fra
grance, and thus saving largely in
the quantity of coffee required.
There are other important con
siderations upon which the process
wo have indicated is to he recoin men
ded. This mode excludes all foreign
substances for clarifying the coffee,
the liquid coming from the urn or
other vessels pure and (dear as wine.
The steam is condensed, and afl the
aroma or vessel, thus securing at all
times a beverage grateful to the taste,
highly flavored, and perfectly harm'
less as to its effect upon the nerves.
Hy this mode of preparation, the acrid
deleterious property of the coffee,
which is evolved by bailing, is wholly
avoided. _ Experience ban shown
that persons of the most delicate and
sensitive nervous organization, who
cannot use coffee prepared in the old
mode, can drink tiie delicious bever
age, when made in the manner we
have pescribed, without the slightest
isjiucy to live system. -Appleton's Jour.
