Hoot Crops.
Mr. Editor—l regret to see the
little attention that is being paid
to root crops by our farming com
munity. - They do not appreciate
their importance or know their
value, notwithstanding that the
leading agriculturists of the world,
who have proved their great worth
by years of experience, have again
and again demonstrated that, for
stock, they arc the healthiest,
cheapest and best food we can raise
I cannot understand ftiis care
lessness of their interest by our
people, amounting, I fear, almost
to a prejudice against root crops.
A little turnip patch, of a few
rods in extent, scratched over and
sown broadcast, and intended
more to supply winter greens than
for stock food, is generally the
amount of their efforts in this di
rection. Not one in a thousand
ever plant carrots for ntock, ami
1 do not know one who has ever
raised a mangold vrnrzel, with the
exception, pci haps, of Mr. Milne,
near Macon. In England, the
root crops are estimated to be
worth annually a million sterling
—300,000,01)0 acres being devoted
to the raising of turnips ! By this
intelligent farming, England,
within the last thirty years, has
increased two fold her capacity
for raising stock—and we all know
that it is from England we draw
all the fine stock we have In
Belgium, the most densely popula
ted country on the continent of
Europe, and where the largest
number of cattle to the square
mile are supported that are to be
found anywhere, a filth of the cul
tivated land is devoted to roots.
Competent authorities have com
puted the relative yields of small
grain as compared with roots. —
An acre ot land which would pro
duce 30 bushels of barley will
produce 1,000 bushels of turnips;
one that will yield 20 bushels of
rye will yield 800 bushels of car
rots, and one that will yield 40
bushels of oats will yield 1,200
bushels of mangolds.
In view of these facts, why is it
that so few Southern planters pay
any attention whatever to so pro
ductive ami profitable a crop V If
they want to ha\c improved stock,
they must improve their system.
Fodder and crab-grass hay alone
will not be sufficient. They must
have turnips, and must try wheth
er mangolds will suit our soil and
eliinate. 1 believe they will. Boots
never fail in our gardens, and,
when the soil is properly prepar
ed, planted, and cultivated, as fine
beets can be raised in Georgia as
were ever raised in Norfolk, Eng
land, or in Flanders.
And, again, to be independent
of commercial fertilizers, and make
enough of homemade manure—if,
indeed, that consummation be ever
possible—we must keep more
stock ; and to do tliat, we must
produce more suitable feed to sup
port them. Sheep raising—which
I see is attracting some attention,
in the papers, at least—can never
bo successful without turnip rais
ing. The two go together, and
cannot be separated.
I am rather late this year with
my advice; but there is yet time
to raise a good crop of globe tur

In this part of the country there
is a great deal of cabbage used,
but it is very seldom boiled whole.
It is cut as for cole slaw and cook
ed in various ways, and is more
dedicate, and the odor of boiled
cabbage is wholly avoided. In
cooking, use a very little water
and salt, cook a few minutes, add
butter or mcat-fryings, or, better
still, a cup of cream added just
before it is done. Some add vine
gar, and let it boil up once.
The nicest way I ever saw cab
bage cooked is as follows : The
cabbage is cut as for cole-slaw,
an egg is beaten up with a little
sweet cream and a little sugar in
a separate dish; the amount of
vinegar you wish to use is at hand
in another dish. Everything be
ing ready, drop a little piece of
butter into the pot over the fire;
do not let it fry, or it will discolor
the cabbage, but add immediately
the cream preparation and the vin
egar, and stir until just ready to
boil, and then empty in the cab
bage and stir on, letting it boil
one minute or five minutes, accor
ding to taste. This is to eat warm,
blit id good Cold, though not so
nice as the following: Cut the
cabbage and lay in a dish as
before. Take the amount of vine
gar necessary, a little sugar, and
a little butter; as soon as this
boils, pour it over the cabbage and
set it away to cool. It is impos
sible to give a precise rule, as cab
bages differ so much in compact
ness, and vinegar varies in sour
ness. These preparations ate
good for lettuce; and the one with
cream, egg and vinegar, leaving
out the sugar, is excellent for
mashed potatoes in the Spring,
when that vegetable is not of good
quality, and the appetite craves
fcoinethmg decided.
