Cattle Breeding.
Mr. Editor —Happening in the
Agricultural Department a few days
since, and looking over the Agricul
tural paper* there 1 found the Farm
and Home among them, and in it
I saw astaieinerlb* Mr. Win. Brantly
giving dilection how to secure male
or femal animal* at pleasure.
Some years ago, Prof. Tiniry, sur
geon in the Academy of Geneva,
Switzerland, discovered and published
a theory, which is more sure and
general, for securing the desired sex at
will; a theory which has been proved
and attested by the National Society
in that country and others of Europe,
for a series of years, and proved to
be assure or reliable as nineteen to
twenty in various animals, fowls and
bees.
They tind that in nineteen cases
out of twenty, that if the male is
is given to the female irnmedistly
upon the fiist signs of heat, the off
spring will be female, and if delayed
a few days it will be male. So, the
hirst eggs layed after the tread will
produiH; female chickens; those laved
later, male chickens; and so the first
eggs layed by the queen bee produce
queens.
Doctor Naphey, of Philadelphia,
in his work on the “Transmisson of
Life,” has enlarged and elaborated
this subject at considerable length,
and proves it to he equally true in
regard to human beings.
This is an important subject to far
mers am! stock raisers, and well worth
their careful attention, as it is re
garded with lively interest by intel
ligent breeders in Europe, and has
received the sanction of their large
associations and extensive breeders.
In Prof. Thury’s work, as well as
that of Doctor Naphey, the philoso
phy and reasons of this result are
given with some distinctness, based
on caieful observation.
Most farmers, particularly on the
worn and exhaustod lends of the
South, will hasten their reatoiation
and improvement by raising a
greater number of stock and sheep,
and less cotton and cereals, for a few

should always be so arranged, if pos
sible, to allow tlie head of the
sleeper t® he towards the North.—
Frequently, in cases of sickness, a
person will find it imposible to ob
tain rest if the head is in any other
direction and often a cure is retarded
for a long time A pominent physi
cian had a patient who was suffering
from acute rheumatism, with painful
cramps running from the shoulders
to the fingers; and while his head
was to the South he could do noth
ing towards his relief. On turning
the bed, however, so that the head
was towards the North, the patient
uttered expressions of pleasure, and
in a few hours a great improvement
hail taken place, and he was in a few
days almost entirely cured. Many
other cases are given by scientific
persons; an I, people in building
houses should always hate this in
view.
Am Yon* Beds. —Some advocates
fur excessive neatness have tne beds
made up immediately tliey are rac.at
ed. It is not healtliy. They need
to air for a couple of hours. Open
the windows as wide as possible,
and set open tho door also. Unless
there is a thorough draught, there
is no true ventilation of a sleepsng
rooin The only exception of this
rule is during high winds, when the
door cannot safely remain open,
and in very wet and foggy weather.
Bkkfstraks and OysteijSacck.—
Strain off the liquor of some oysters,
and put the oysters in cold water
while the liquor is simmered with
a hit of mace and lemon peel; then
put in the oysters, slew them a few
minutes, add a little rich cream and
a piece of butter rubbed in Hour; let
the whole boil up once, and having
broiled beefsteaks on a gridiron,
throw the oyster sauce over them
and serve instantly.
To Make Mustard. —Mix tho best
Puihain mustard—as many spoons
fui as are needed for iiumediato use
—with some new milk. Mix grad
ually until perfectly free from lumps,
and add a littlo cream. The ad
dition of halt a small* teaspoonful
of sugar is thought by many to be
au improvement.
Giblet Tip. —Stew well cleaned
goose or duck giblets with a small
quantity of water, onion, black pep
per, a small bunch of sweet herbs,
and a few sliced Irish potatoes, until
nearly done. Let them become cold,
then put it in a dish with the liquor
of the stew and bake, and when the
pie is baked pour in a cupful of cream.

Lemon for a Cough —Roast the
lemon very carefully without bruning
it; when it is thoroughly hot, cut and
squeeze into a cup upon three ounces
of sugar finely powdered. Take a
spoonful whenever your cough trou
bles you. It is good and agreeable
to the taste. Rarely lias it beeu
knoAii to fail of giving relief.
