The Future of Southern
Farming.
Mr. Join. 11. Pent, in the Practical
Fanner, after expressing the opin
ion that foreign whfto labor can
never be made available to any
considerable extent in cotton cul
ture, thus states his views as to
what Southern farming should and
must bo henceforward in order to
be truly smvessful :
My impression is, the present
system of cotton planting, on the
targe scale in which it is now cur
ried on, must be abandoned, and
gradually it will become a part of
diversified agriculture, when the
policy will be, from improved cul
ture, to make an acre planted in
cotton make a bale or more; so in
reducing the acreage planted the
amount made will not be dimin'
ished. Such, 1 think, will be the
teudcucy in the future for raising
cotton. As regards agricultural
machinery for Southern farmi g,
we must adopt it; it is inevitable,
but it will be gradually done, and
not until we have more intelligent
labor than wc flow have, to bundle
it. Wo are m>w using improved
labor-saving ploughs, horse reap
ers, thrashers and separators, hut
they can only be entrusted with
white laborers, that is, a white
man must superintend the using
them, if negroes are employed as
assistants, l’iace napcis, thrash
ers ami separators in charge of a
parcel of negroes, and no white
man to supci iu'cml their niuuing,
and shipwreck would soon be their
fate; and as regards lidingculli
vatots, I consider them not adap
ted to successful culture; the
plough attached to them cannot
be properly managed, to be made to
do good work, l.ut there are gang
cultivators in use, managed by the
ploughman on font, that do good
work ami are good auxiliaries as
kborsavingimplements; a plough
man must be on bis feet te manage
any plough or cultivator properly
—this riding business is all a fan
cy—and nothing practical in it.
Southern planting or farming, to
be made profitable, must be con
ducted on small farms by thorough
preparation and cultivation of the
Bui). It is impossible to keep up
the fertility of the soil and fencing
on large plantations ; and no one
can afford to tend exhausted lands
with hired labor, lienee, we say the
acreage of lands cultivated must
be curtailed and be made to pro
duce largely to the acre, if not,
there will be no profit in fanning
The average product of the cotton
plantations is not more than a bale
to five acres. Would it not be
best, then, to manure and culti
vate fifty acres, so as to make
what two hundred and fifty acres
now make. It would certainly
save much capital now invested
in lands, mules and for labor.—
When labor was cheap, costing
nothing more than food and cloth
ing, we could afford to tend poor
lands, but when scarce and high
priced the policy is to make the
land fertile and produce largely.
Thus our plantations will be de
creased in the acres tended, so as
lo lessen the expense in hands re
quired, nud increase tin- crop prof
its ; it is the only plan on which
they can be managed profitably.

Stir into a quart of boiling milk
tbo yolks of three eggs, three heap
ing spoonsful of meal and a half
a cup ot sugar, well beaten to
gether. Cook live minutes, stir
ring constantly ; remove from the
fire, and add the whites, beaten to
a still froth.' Pour into a pudding
dish, and bake one hour in a mod
erate oven. Serve with cream and
sugar.
Baked Ai-i-le I)l.mi-lings.—Choose
large Russet or sour apples that
cook tenderly; peel and quarter
them, take out the cores and use
one apple to the dumpling. Finch
your pie-crust well, grease your
pie-pan, set your dumplings right
side up; do not let them touch
each other; set them in your oven,
and bake a dedicate brown. Eat
hot with any sauce you peeler.
Tomato CVstakd.—Tills is said
to be a beneficial diet for consump
tives. It is made by straining
finely stewed tomatoes through a
course seive, and adding two pints
of milk ami one pint of tomatoes,
for four eggs ami one teaspoonful
ot sugar, Bake in small cups
quickly.

temperature and the moisture of

fertilizing elements in a soluble
state, is an essential condition for
the production of perfect fruit.
