The Andersonville Prisoner*
Speaking of the forthcoming woi
Mr. Pollard, the Lost Cause, the News
says, In a chapter on the exoliange and
prison'questions, the elithor has made
a most complete, triumphant, and un-
answlrable vindication of his country
men from charges of crusty, eto., and
those vrho have read the trial of Wirt*
may have here the ntleram partem. We
take here from the author a curicus
fact for the fivst time substantiated by
a distinct reference to documents —thnt
the Confederate authorities themselves
published to tlie Washington tlovern
meat the mortality of Andersonville,
and offered to that Government a froo
gift of their sick and wounded prison
ers:
“But the history of the extraordina
ry efforts of the Confederate authorities
to relieve the sufferings of Anderson
ville, through some resumption of ex
changes, does not end with the propo
sition reforred to as made by Commis
sioner Out-1 to exchange man for man,
and leave the surplus at the disposition
of tho enemy. It was followed by an
other more libernl and extraordinary
proposition. Acting under the direot
‘instructions of the Secretary of War,
and seeing plainly that there w-s no
hope of any general or extended par
tial system of excbnnge, Commissioner
Ould, in August, 1804, offered to the
’Federal agent of exchange, General
Mulford, to deliver ta him all the sick
and wounded Federal prisoners wo had
‘without insisting upon the delivery of
any equivalent number of our prisoners
in return. He also informed Gen. Mul-
■ford of tho torriblo mortality among
the Federal prisoners, urging him to be
swift ill sending transportation to the
-mouth of the Sayannah rivor for the
•purpose oftnkiiig them away. The
offer of Commissioner Ould included
all the sick and wounded at Anderson
ville and other Confederate prisons.
He furlher informed Gen. Mulford, in
order to make his Government safe in
sending transportation,’that if tho sick
and wounded did not amount to tdh or
fifteen thousand men the Confederate
authorities would make up that num-
'ber in well men. This offer, it Will be
recollected, was made early in August,
1864. Gen. Mulford infovtned'Cotnmis-
siOnor'Ould that it was directly com
municated to his Government, yet no
timely advantage was%ver takon of it.
“This interesting and important fact
is for the first time authorativoly pub
lished in these pages. It contains vol
umes of significance. Tho question
occurs: Who was responsible for the
sufferings of the sick and wounded
prisoners at Andersonville. from August
'to December, 1804? Tho world will ask
with nmn/.oment if it was possiblo that
thousands of prisoners woro left to die
in inadequate places of confinement,
merely to niako a case against the
South—merely for romnneo 1 Tho sin-
glo fact gives the clue to the whole
story of tho deception and inhuman
cruelty of tho authority at Washington
witli referonoo to their prisoners of war
—tho key to a diopter of horrors that
even the hardy hands of history shakes
to unlock. To blaokcn the reputation
of an honorable onomy, to make a false
appeal to the sensibilities ul the world;
to gratify an inhumnn revenge. Mr.
-Stanton, tho saturnine and malignant
Secretary of War of Washington, did
i ot hesitate to doom to death thousands
of their countrymen, and thou tosmear
their sentinels with accusing blood.”

A beefsteak ought always to be broil-
ad and newer fried; but tlm following
method-of cooking is recommendnd by
a Mrs. Sutton, whioh even those ivbo
are accustomed to frying may bo willing
•to try : #
The frying pan being wiped very
dry, place it upon the stovo and let it
become hot—very hot. In the mean
time mangle the steak—if it ohance to
be sirloin, sO'nitich the ‘better—pepper
*~ l salt it, then lay it on the hot, dry
-pan, vrnou. Instantly cover ns tightly as
possiblo flesh touches
the heated pan oF ^ it 6eethe ,
and adheres to lb but in r. to*« ««oc,ids
it becomes loosened and juicy. t-.ve,,
half minute turn tile steak, but bo care
ful to keep it as much as possible under I
•cover. When nearly done lav a small
pfeda of butter upon it; and if you want
much gravy, add a tablespoonful of
strong cott'ee. In throe minutes from
the tiino the steak first goes into the
pan it is ready for the table. This
method of cooking, makes tho most de-
lirious,‘delicately broiled steak, full of
.juice, yet retaining the healthy lieefy
flavor, that any John Bull could l-e-
qu ire. .
The same method may be applied to
mutton chops, only they require a lit
tle longer oooking to prevent them
from being rare. An exoeilent gravy
may be made from them by adding a
little creanfT tlliokened with a pinch of
flour, into'which, when off the lire aud
partly cool, stir the yolk of an egg, well
beaten.
