Corn Starch Cake. The whites of six
eggs ore cup of wh'te sugar ; half a cup of
butter; half a cup of sweet milk ; one cup
of corn-starch; not quite two cups of fl iur
one small teaspoon of soda; two of cream
tartar; lemon ox’rnc*.
Tincture of Rhubarb —One table spoon
ful of rhubarb, one of magnesir, three cents
worth of cloves, rix ce"t« worth of cinamon.
St«ep the species in a little water, then add
about one quart of water, brandy and h»af
sugar to keep. A perfect cure in diarrhaoa,
it is said.
Lfmon Pie —The juice and rind of one
lemon (grated); two yolks eggs: three table
apoonfuls of flour and milk to fill the plate ;
bake this, then beat the whites of two eggs
as for frosting. Add two tablepoonfuls of
pulverized sugar. Spread over the pie then
brown lightlv in the oven.
A Western dairvman says the best reme
dy he has found for preventing cow’s hold
ing up their milk is to “take a log-chain
double it, then lav it gently over the cow’s
back or the ‘small of the hack’—so that tl.e
ends of the chain will clear the floor. The
cow loses the power of holding up her milk
and after a few trials will forget the habit.
An English chemist has been experri
menting for the purpose of ascertaining
how much of various kinds of food must he
eaten in order to make one pound of flesh,
lie comes to the conclusion that it requires
25 pounds of milk, 100 of turnips, 50 of po
tatoes, 50 of carrots, 8 of oatmeal, 7$ of
barley meal, and 3$ of beans.

consists merely in melting together tallow
and common rosin, in the proportion of two
parts of the former to ore part of the latfpr
and applying the preparation, hot to the
soles of the boots or shoes—as much of it as
theltather will absorb. One farmer dec’ares
that this little reee'pe alone has bepn worth
more than five years’ subscription to the
newspapers publishing it.
Quinine Biscuits. —One of the London
bakers has introduced a dietetic novelty in
the shape of quinine biscuits. Each bis
cuit is estimated to contain one-fourth of a
grain of quinine, and for delicate stomachs,
or where it is desirable to disguise medicine
as much as possible, or to combine food
with medicine in perfectly agreeable form,
these biscuits are likely to become very
popular.
A Useful Table. —To aid farmers in ar
riving at accuracy in ascertaining the
amount of land in different fields under
cultivation, the following table is given by
an agricultural cotemporavy ;
5 yards wide bv 908 long contains 1 acre.
10 yards wide by 484 long contains 1 acre.
20 vards wide by 242 long contains 1 ace.
40 yards wide by 121 long contains l acre.
60 feet wide by 726 long contains 1 acre.
110 feet wide by 396 long contains 1 acre.
220 feet wide bv 198 long contains 1 acre.
Hardening Cucumber Pickles —A cor
respondent of the Country Gen lecan says:
Alum will harden cucumbers. To a gallon
of vinegar add one ounce of powdered alum
If the vinegar is put into bottles, tightly
corked, and set in a kettle of cold water,
with hay or straw between them to keep the
bottles from knocking together, and allowed
to remain over the fire till the water boils,
then remove, and kept in the kettle till
nearly cool, the vinegar will keep perfectly
clear when used for pickles ; but it should
be added them cold Shreds of horse radish
root will prevent all piekles from molding.
How to Hem »ve the Taste of Wor d. A
new keg, churn, bucket or other wooden
vessel, will geneally cnmmunica'e a dis
agreeable taste to anything that is put into
it. To prevent this inconvenience, scald
the vessel well with boiling water, letting
the water remain in it until cold ; then dis
solved some penrlash of soda in lukewarm
water, adding a litle lime to it ; wa*h the
inside of the vessel well with this solution.
Afterward scald it well w ith hot and
rinse with cold water before you use it.
The reason for this is the ready combina
tion of resinous matter with alkalies to
form compounds soluble In ivoohol.
Reoeipe f r Ouri.no Pvrk. —At a recent
meeting of the Worton Agricultural Club, of
Kent county. Md , the subject for discus
sion being “Fattening, Killing and Curing
Pork," a member gave a “reoeipe which he
received from the late - Major Itevbold. for
curing meat and spoke very highly of it;
be had lost no meat n<>r seen a skiper in
bis for the sixteen years he hnd used it, and
spoke of the haras as being very juicy and of
fine flavor. I intend to use the reeeipe this
fall, ar and as some of your readers might like
to use it also, I will give it: For every 80 lbs.
of pork take 1 lb. salt, 1-4 lb. sugar, 1-3 lb.
saltpetre, mix them well together and rub
the meat thoroghly with the mixture, allow
the meat to remain on a shelf <>r other con
venient place for 24 hours, then salt away,
using two quarts of salt to every 80 lbs. of
meat, allowing it to remain in bulk for 15
days, by w r hich time it is cured and fit to
hang up and smoke. An opening should
be made in the ea>k to all >w thepickie that
will make to run off. It was held that meat
should not be smoked in damp or wet weath
er, as the dampness caused the smoke to
blacken the ment and prevent it lrom pene

Storing Winter Apples.—A correspon
dent of Laws life, who claims to have ex
tended experience, is “decidedly of the opin
ion" that apples keep far better when put
into close barrels or boxes* and secluded as
much as possible from the air. When thus
stored, he says they will come out in the

Many varieties, as the Tall man

arc not considered as long keepers, and
shrivel badiy, Tvjll do well treated in this
way. I have, he continues, found univer
ialfy that they keep better to let them lie
without picking over. It is much better to
pile them into a large bin across the cellar,
say six or seven feet high and four or five
fpet wide, and cover them up tight than to
liy them oti shelves. I-onpe saw’ such a bin
that a man had kept through the winter.

open the windows on the side ot the cellar
next to the bin to let in the air, that they
might Weep better. I was at bis place and
be called my attention to the fact. Two
windows over the bin were opened about ten
davs or two weeks, and the apples exactly
• n site the windows, about one-third, rot
te i for as much as a foot in depth, and the
remaining part on either side, were not
retted at all.
