Fish as Manure-—Dr. J. V. C.
Smith said fish was a very good ma
nure for worn-out lauds. Their use
for this purpose was suggested to the
Puritans by Squanto, au Indian, who
told them'that the way the natives
managed to raise corn was by putting
three herrings into each hill. The
Doctor also remarked that the great
value of tiie overflowing of the Nile
was the fact that the deposit it left on
the land was composed of millions of
infusorial animals. This fertilizing
material, so rich in animal matter, had
made Egypt the grauary of the old
world. He also alluded to the cus
tom of burying dead animals near
trees, so that they may derive the fer
tilizing matter contained in the mus
cles, and the phosphates in the bones
as the bodies decay. Mr. Bruen f old
how a friend of his bought a farm of
poor land for $2,000. This farm was
manured with Moss Bunkers, spread
all over thickly, and plowed under, af
ter which a crop of wheat w-as sowed.
The proceeds were forty bushels to the
acre on seventy acres, which he sold
for $1.50 a bushel, and thus paid lor
the place twice over with the first
crop, and it was the fish that did it.—
Dr. Ciovvell said that where Moss
Bunkers were used continuously, the
land becomes sour after the third year,
and will not produce a crop. The
same result is noticed with fish guano.
Hearth and, Home.
Broiling.—When meats are broiled
on a gridiron over hot coals, the sud
den high heat applied sears the outside,
which shuts in the juices, and the rap
id application of heat soon cooks the
meat through, if in moderately thin
pieces. It is then tender, juicy and
palatable. Those who never broil their
fresh meat, fish and poultry, do not
know the excellence of a properly
cooked dish of animal food Of al 1
the methods for fowl, broiling is the
best—provided the cook is active
enough to handle the gridiron and
meat dexterously, so as not to make
charcoal of au atom and yet quickly
cook every part of the meat sufficient
ly to suit the taste of the consumer.
Atple-Dumplixgs.—As the season
for apple dumplings is now at hand,
allow me the liberty of saying that
they can be made so that every one,
even of delicate digestive powers, can
eat them with impunity. Of course I
am saying nothing but what every good
house keeper must know already, when
I recommend that the dough, if it may
be so called, should be made of about
one part flour to six parts potatoes,
boiled and mashed thoroughly and ev
ery lump removed. It makes a good
paste and the dumplings can be enjoy
ed by every one without the fear of
after unpleasant results. Try it.—

Here are some specimens of what
two Englishmen saw' in America, ta
ken from a notice of their book in
Harper’s Monthly : In describing the
large trees of the Yosemite Valley,
one said that “it took two men and a
boy to see the top of them.” One be
ing asked by a friend if he saw a cer
tain mosquito on the weather-vane of
the State House. (!) at St. Louis, an
swered : “Yes, I see it winking.” A
third, in describing the prices of car
riages at Niagara, asserted that the
“hack fares are so high that the Falls
are insignificant by comparison.”
“You must have lived here a long
time,” said a traveling Englishman to
an old Oregon pioneer. “Yes, sir, 1
have. Do you see that mountain ?—
Well, when 1 came here that moun
tain was a hole in the ground 1” The
Englishman opened his half-shut eyes.
A Western editor, going home late,
saw- “a youn<i lady and gentleman
holding a gate on its hinges. They
were evidently indignant at being out
so late, and we saw them bite each
other several times.”
In reply to a young friend leaving a
town because some things in it were
not exactly to her taste or content, an
old lady of experience said : “My
dear when you have found a place
where every body and every thing are
always pleasant, and nothing w hatev
er is disagreeable, let me know 7 , and
I’ll move there too.”
