IMPROVEMENT IN COFFEE- , .; Mr. Fessenden—To the lovers of good cof fee, a simple, pra ticable, and easy method, can readily be adopted to insure au improvement iu this delightful beverage. Every one knows the difficulty of getting a cup' of good coffee at any of the city or country ho tels, or on hoard our steam boats. Not one time ill a hundred, will he succeed, (and by the bye, if he gets it good at homo he docs well.) 1 have "for a long time made use of a German prepara tion (imported I believe only at BalSthoVc.) which is the best thing I havo yet seen. Fot the want of a supply of this article. I have been induced by the rocommendation of a friend, to substitute prepared carrot, and, much to lay surprise aud satisfaction, 1 find, with the exception of the pe culiar sp;cy. .flavor, the carrot‘possesses all the properties of the German coffee. It improves the color, smooths the sharp angles, and makes a rich nutricious and luxurious beverage. To prepare the carrots for use, as a matter of course, you will wash them clean, slice them in pieces the thickness of a dollar, spread and dry them, and after the bread is withdrawn, place' them iu the oven, on sheets of tin, aud let them remain uutil they become slightly brown, when they are fit for use, and may be bruised in a mor tar, orused without, as you prefer. But be care ful not to attempt grinding them unless you wish to dull your mill. I have heard of a score of substitutes for cofi’ee, .rye, com' arid potatoes, the only recommendation- of which, was economy, and after all it was rye coffee aud nothing else. This not only embraces economy, but at the same time, furnishes you with coffee, and r.right good article too, with tho addition of cream, which every one should have, .yon will equal the Delmouico’s. I make use of two parts of prime old Java cof fee, (five years old the better,) and one part of bruised carrot. . Although a trial of it cannot fail to be approved, yet being left to the thanagrnient of domestics, those Who have a full bag to go to, will, to save iliemsoivos the trouble, neglect this valuable pre ' pnration.
