HARRISON’S MARKETING.

opß a Romance —Justice Horace
Gray’s Rule for Selecting Game.
(Copyright 1880.)
Washington, April 20.—50 it is said that
p gjjde it Harrison complains that he ba3
cot tad a tender steak since he entered upon
occupation of the white house! and that he
in-GO ZIEMAN, WHITE HOUSE STEWARD.
lon T s for the plain, unor lamental fare of
bis Indianapolis home! And many tender
hearted people, whose democratic tenden
cies are apparently more pronounced than
tbeir appreciation of humor, have lifted up
their voices at once in sympathy for the
Pro-ideut’s gastronomic orgausand in praise
of his modest tastes. If the President act
ually said, as be is reported, that ho had
n t had tender steak since he left Indian
apolis, it was undoubtedly m ant as an ex
ecutive witticism; for is this not Lent? And
will not good church people, of whom Mr.
Harrison isthe most distinguished,nocexcep
ting tiie Postmaster General, begin upon the
dav this letter is printed to taste once m ire
with ut restraint the food that is developed
tv, skillful preparation of the ribs, flank*.
Fhoul tors and hoofs of cattle and sueep and
swine!
When the President said he had not eaten
tender steak since March 4, ho doubtless
h;;(i in his mind the famous essay on tie
frogs of Ireland. Doubtless he enjoyed a
dignified laugh in bis Prince Albert sleeve
at” bis own humor and at the expanse of
sensitive Washington butchers who might
not see the joke.
In all probability, however, he never said
anything of the kiud, for if he likes steak
ho could have had it on the non-fasting days
id pie toons quantity, cut thick and juicy
and of a tender quality; for not only are
there markets in this city, but
there is a skilled market man also, who, if
be fails to suit the desires of the present in
cumbents of the white house, will score bis
first failure in many administrations.
This marketman is on governmental pay.
It is not great, but suffices, aud duties
are not onerous though, of course, they re
quire the exercise . f good judgment based
on experience. Simultaneously with the
report of the President’s remarks O ' steaks,
comes the anounceinent that Mrs. Harrison
ooi’templates doing the marketing herself.
Although this report also may be attributed
to ignorance or dullness, it is not quite as
absurd as the firs*y for Mrs. Harrisou would
not find good c mpany lacking if she should
venture into the central market building
where all provision buying of any conse
quence is done. There is in fact something
of a fad rampant in high circles for going
to market. To just what this may be at
tributed is uncertain, as it always is in the
case f fads. Perhaps the ladiot enjoy the
sight and aroma of fresh meats and vege
tables, \ ig cheeses, tubs of butter and south
ern fruits. Perhaps also they like to go to
t; cential building because there they can
purchase t e most elegant produc
tions cf the florist’s business, for several
stalls are located there whore nothing but
fl wers and potted plants are exposed for
sale. Just who the ladies are who will rep
resent the present administration in per
se cal marketing cannot be said st present
but during the past four years Mrs. Vilas
was almost a daily visitor at the stalls.
Mrs. Logan also does her own marketing
when tie is living in town.
Justice Horace Gray, of the supreme
c mrt, always insists upon do.ng errands of
this i aturo himself. Justice Gray, by the
"■ay, is an unusually conspicuous ligure in
Washington wherever he g es, on account
of tis great Light. He must be at least 6
feet 4 inches tall, and many a smile basVieeu
caused at rect tions where tie has met men
of small stature, line President Harrison
himself. Tue effect of their mutual greetr
inn is very much like a scene from a comic
opera. The justice is a keen expert on all
mutters pertaining to the market, especially
in tbe selection of game. It is raid at the
sta.o there that he wails oefore purchasing
a bird until tha feathers have begun to drop
out and fall upon the floor. Then it is ripe
and goes into h s basket at any price.
I i.e fancy for personal marketing ex
tends to the permanent society cf tbe town
rather that part of it which is. not di
rectly connected with the administration,
it ould be interesting to know how many
romances have developed out of the custom.

SHE DID THE MARKETING HERSELF.
The white house steward would always
be an interesting person, whatever his
career, and the one now holding the office,
Hugo Ziernan, has had an extraordinary ex
perience, He was at o.ie time the caterer for
that Prince Napoleon who was killed while
fighting the Z ilus in Africa. After that he
was the steward At the Hotel Splendids, in
Paris, which was at that timo a famous in
stitution of its kind, but eventually Gen.
Boulanger secured ft and turned it into a
military club. That threw Ziaman out of
his occupation and he made a tour around
the world. After a time he brought up in
New York city where he conducted the
Brunswick cafe. Eventually he drifted to
Chicago and became conn oted with the
Hotel Richelieu. There Crown Prin-e
Russell, as toe President’s son iscommo lly
styled nowadays, found him and induced
him to take a place in the white house.
The Presidemial steward i, by r law placed
under |2U,003 bonds for his good behavior.
The reason for imposing this tremendous
security lies uudouotedly in the great value
aitaching to the plate aud other tableware
in the mansion. Compared to his bonds,
his salary is pitiably small, it amounts to
only SI,BOO annually aud it would seem as
if a steward of Zieman’s c nsequunca, ex
perience and undoubted abilitv would hesi
tate a long time before accepting the posi
tion at this figure. He probably foresees,
however, that the prestige cf having ca
tered for the President of the Unit and Mates
will serve hitn a good turn when another
administration shall have brought his ser
vices there to an end.
The most famous steward who has served
at the white house duri 1 g recent years was
Cru np, an employe of Garfield. Ho gained
his celebrity through his intimate relations
with the family after Guiteau had fired his
fatal shot. Crump became the target for
all kinds of interviews, and although his
information was discreetly given or with
held, as tho case might he, his name was
paraded to a greater degree probably than
that of any other caterer who ever had the
good fortune to keep a position with a
President.
Although the present incumbent of the
stewardship of the white house is a very
famous man, the people who carrv out his
instructions have no special claim to dis
tinction. That brings to mind again the ab
surd report that tho Preside it is dissatisfied
with his cooking. Asa matter of fact the
cook at the white house is no scientific
Frenchman with aristocratic gravies and
taucos dripping from his fl igers’ ends, but

a woman. Moreover she is the same woman
who has cooked for the President when he
was plain Gen. Harrison—lndianapolis.
She came to Washington at the request of
the President and bis family.
When Mr. Cleveland was here he em
ployed a Froneh chef, and though he may
not" have made such a splurgo as did his
predecessor under Mr. Arthur, all evidence
goes to show that be was eminently success
ful. It is interesting to note that this chef
was paid no more taa.i slooa month.

The amateur photographers ara already
laying in a stock of dry plateßand making
prep nation., fir the aval parade of the
centennial celebration. There will un
d übtedly be over 5,000 pictures at least,
taken of this feature -do ie. The society of
amateurs has secured the stoa ner Philadel
phia from which to view the proce-sion, and
many members have signified their inten
tion of going on the trip. The plan of hav
ing a steamer t > themselves is an excellent
one, as on the excursion boats the amateur
is constantly aim yed by other sight-seers,
and, of course, himself is often u rource
of annoyance to others. On the Philadel
phia there will be ample room for the tripod
men to fix their apparatus, while the detec
tive camera experts will have full sweep.
Ibe display of cameras will boa sig tin
itself. 1 is proposed afterward to give a
lantern slideexiuhition of the best pictures
taken at the society rooms. The taking of
marine views is a specialty among pho
tographers, and not a few do their best
work in this line. It is to be hoped that tbs
day may be a pleasant cue and the light
good. The amateurs will attend to the rest.

Animal Poison.
Atlanta Constitution, March 17, 1889.
Tho fearful increase in mortality result
ing from the bites of rabid animals is
alarming, and the fact that there have boon
fatal results from the bites of animals
which had exhibited no signs of rabies,
adds to the alarm. The casjinWaJton
county, Georgia, is an instance. The
pois in was communicated by the
bite of an ordinary house cat,
which had never seemed to be
mad. The reporter heard yesterday of a
remarkable caseof a lady who was poisoned
by fondling and kissing a poodle dog. The
dog had distemper, and died of it, aud the
lady’s blocd was poLoued to a degree t at
her body was broken out in great ulcers and
sore- from head to foot. From a beautiful,
healthy woman she soon wasted to a mere
skeleton, suffering great agony. No treat
ment benefited her until on the 28th of Feb
ruary she commenced to take Swift’s Spe
cific (S. S. fch), which at once began to force
out the poison, and she is now getting well
rapidly.
