A German Stewf.d Cadf's-hhad.—
Parboil a good-sized head. In tho water
place two fairly big onions and a toa-
Bpoonftil of allspice ; chop a head of
celery and put it in. When boiled, take
away the bones and drain. Put tho
mt>nt in a stew-pan with two table-spoon
fuls of butter, a table-spoonful of flour,
a table-spoonful of brown sugar, a table-
spoonful of vinogr.r, and a tabic-spoonful
of currants. Lot it brown slightly.
Servo it with the tongue on top, and
garnish with pickles and heots.
Tea.—In making tea tho pot shou’d
bo earthen, rinsed with boiling water,
and left to stand a few minutes on the
stovo to dry; put in the ton loaves, nnd
let tho (Hit stand a few minutes longer;
pour ou boiling water, leaving the pot
standing where it will be at tho boiling
point, yet will not boil, for from tlireo
to five minutes; for moderate strength
use ono tor.spoonful of tea to a pint of
water ; it the water la soft it should tie
used as soon as it Imils, but if it is hud
it is best to boil it 20 to 30 minutes; the
boiling cauees the mineral matter which
hardens the water to sink to tho bottom

Brain Fritters.—Put a calf’s brains
hi oohl water and keep in a cold place
for an hour or two before using it; then .
take oil' tlio skin and take out tho blood
vessels, and beat the brains with a spoon
in a bowl until it is smooth ; then add
the yelks of two eggs, well beaten, a
ta'.ile-spooiifu^ of salad-oil, u half-pint of
milk, a light toospoonful of salt, a lialf-
teaspoonful of white pepper, a small
pinch of cayenne popper, a table-spoon
ful of finely chopped parsley and a quar
ter of a pound of flour. Beat the whites
ot the eggs to ft still froth, anil whon
ready to fry the fritters, beat in with tlie
other ingredients. Fry in plenty of hot
lard or clarified drippings.

gar, one cup of milk, two and one-half

This makes a very delicate tea rusk by
leaving out the huckleberries aud using
only half a cup of sugar.
Brains, Mayonnaise Drbrsing.—
Take two large brains, blanch them in
cold water, then lioil with a little riiie-
gnr and salt in tho water. After they
are cooked, drain and put thorn away to
burden. Preparo a mayonnaise dress
ing, and add to it a very little thick,
sweet cream ; cut the brains iu pieces
and mix a little lettuce or flnoly-cut cel
ery with them, pour over the dressing
nnd servo.
Mook Cream Pie.—Roll out tho up
per and under crust with a littlo flour
between, bake a delicate brown, split
tie in ns soon as baked, and set tliein
away uuttl wanted tor the table, and till
them between with a custard made with
one pint of boiling milk thickened with
two eggs, two-thirds cup white sugar, two
tablcspooufuls flour; salt, season and
scald together until thickened. When

cold.
Ginoku Podding.—Put, »pint of cream,
six ounces of butter, six ounces ef sugar,
and a saltspooiiful of salt into a stew -pan.
Add six ounces of flour and stir for about
live minutes. Take off tlio tiro and stir
in gradually flvo eggs ; cut up in small
pieces eight ounces of pressed ginger and
add the whole. Pour into a mold aud
Iwiil or steam for an hour nnd a quarter.
Flavor an ordinary pudding-sauce with
tho sirup from the ginger mid servo.
