Use half a pound of green grapes and a
pound and a half of ripe elderberries
free from stems; squeeze the grapes
from the skins, putting tho skin aside,
place the pulp in a preserving-kettle
with elderberries, and boil thorn nntil
the pulp oan be pressed through a sieve
to remove the seeds; then return tho
pnlp (0 the preserving-kettle, with the
grape-skins and Bngars enough to
sweeten the preserve; boil it fifteen initi
ates, stirring it often enough to-prevent
burning, and then use it for pieH.
While the elderberry and grape preservo
is being cooked make a pastry. Tho
addition of the grapes to the eldortierriur.
improves the flavor of the preserve.

juice is extracted. To each pint of the
jnioo add a pint of granulated sugar;
put them into the preserving-kettle, sot
it on theflr«, and stir nntil the sugar is
dissolved; oontinno the boiling nntil a
'ittls of the jelly cooled on a saucer
stiffens; then partly oool it, i>onr it into
j'-lly-gloftflefl, and when the jelly is quite
oold cover the glosses with white paper
fastened with white M egg or mncilage.
Apple Jellt.—Use tart, juicy apples
which are ripe and sound; if the jelly is
desired of a light oolor pool them; other
wise cut them iu quarters; do not core
them unless they are wormy; if the
apples are not well flavored add tho yol
low rind of a lemon to eaoh’pound of up-
ploB, and reserve the juice of the lemon to
use later; put the tipples into the preserv
ing kettle with just enough water to pre-
' vept burning, pud slowly cook them to a
pulp; j^hen pOpr them into a jelly-bag
aud let thop; drain thoroughly; uftpr all
tire jtxioe is extracted the pulp muy bo
sweetened and used as apple-sauce.
Strain the lemon jtiioe and add it to the
apple juice; to eaoh pint of j nice allow a
{Hiuud of white sugar; put the fruit
{nice and sngar over the Are in the pre
serving kettle, and boil it nntil a littlq
cooled on a saucer jellies; while the jelly
is bailing skim it clean. Let the jelly:
oool a little when it is stiff enough, and
thep ponr it into glasses; when the jelly;
is oold coyer the glasses with ’white
paper, fastened with white o( egg or

Railway Construction.
The most noticeable feature in tho re
turns of railway construction during the
i first nine months of the current year is

this decrease 'is rather to he welcomed
as a healthy sign, because it shows that
there is little “wildcat” railroading.
Tho enormous wuato of capital involved
in lines built long before they can be
profitable, and in unnecessary parallel
ing of existing rontes, is almost at an
end, and it is safo to say that nearly
every; mile constructed this year was
needed. Tho new mileage is especially
marked in the Southern and far West
ern States, whero the means of trans
portation have been inadequate.
Steel rails at twenty-seven dollars per
ton, and money a glut on the market,
are calculated to invito railroad con
struction ; bnt the publio has been
“bitten” so many times that no such
mania for railroading 'as marked the
period 1881- 83 can be expected.

mand for canned salmon the sardine-
packing bnsinass of Maine has fallen off
one-tbird-thia season. , ..
Judge Hayes, of Iowa, delivered the
charge to tho Grand Jury in the matter
of indictments under the new Prohibi
tory Liquor law. He charged tho jury
that while selling liquor is indictable,
buying it is equally a violation of the
jaw; that all persons testifying to hav
ing purchased liquor are subject to in
dictment, and thut referring, aa it is
supposed, to the Temperance Alliance—
in case ot any persons being induced or
encouraged by any organization «r body
to buy liquor for the purpose of crimi
nating the seller, such buyer would be
indiotable, and such body would- be
guilty of conspiracy and subject to in
dictwent.
