Horace Cummings...
A Star On The Horizon
Before the start of the
basketball season, Horace
Cummings made a move that
made him not just a good
player but a great one. And
now the Atlanta Hawks are
interested.
Last year, and the year
before that, he was a strong
rebounding 6’7” center who
scored occassionally, with
hardly noticeable tip-ins. Now
a forward, he is the star of the
show, (along with Lester Paige
who led small college scorers in

TRY CARIBBEAN COOKING THIS CHRISTMAS!

Newborn, a Caribbean Christmas is a sensual feasting of he
tnd soul; a memorable meal with a individual identity. Christmas
in the Caribbean, as Mr. Holder describes in his Caribbean
Cookbook (Viking Press) and the December issue of Essence
magazine, combines many heritages, but the mix is pure West
Indian. The ambiance makes you heady. You put on an apron
and go about making sure everything edible and drinkable is on
the table. Here are a few recipes with which to begin -
CALLALOU
2 salted pig tails (cut in 1-inch pieces soaked in warm water to
cover for 3 hours)
I*A lbs. fresh spinach leaves
Meat from 2 large boiled crabs
8 okra pods
1 garlic clove, minced
1 tablespoon butter
Drain soaked pig tails, rinse well with hot water. Place pig tails
in saucepot, add 2 cups boiling water. Boil for 30 minutes. While
meat is boding. Strip stalks and ribs from spinach leaves. Tear
leaves into bite-size pieces, and cut stems from okra pods. Add
spinach, crab meat, okra and garlic to pig tads in pot, cover and
let simmer for 45 minutes. Add butter, stir with wooden spoon.
Serve at once as a side dish or soup.
COQ AU RHUM KENDAL
1 large frying chicken
(about 3*/2 to 4 lbs cut up)
2 teaspoons of salt
1 teaspoon black pepper
1 teaspoon Worchestershire sauce
1 teaspoon soy sauce
*/i teaspoon MSG
% cup rum
2 cloves garlic, finely minced
‘/z cup chives, chopped (fresh or frozen)
6 tablespoons cooking od
1 tablespoon brown sugar
1 large onion, coarsely chopped
1 can (3 ozs.) sliced mushrooms
I'/z teaspoons granulated sugar
*/2 cup water
1 jar (3 ozs.) pimentos sliced in strips
Season chicken pieces with salt, pepper, Worchestershire sauce,
soy sauce, MSG, rum, garlic and chives Marinate for P/2 hours,
remove chicken from marinade and set aside. Heat 4 tablespoons
od in a heavy skdlet. When od is very hot, add brown sugar. After
sugar has melted and turned very dark brown, add chick and
saute about 8 minutes, turning once. Add chopped onion, and
marinade to chicken. Cook 5 minutes, add mushrooms,
(granulated sugar nd water. Cover and simmer for 30 minutes over
low heat. If necessary, thicken sauce by adding 1 tablespoon
cornstarch dissolved in 2 tablespoons water. Saute pimentos for 1
minute in remaining od. Remove pimentos and garnish chicken.
Serves 4 to 6.
SOUSE
2 lbs. fresh pig feet
Vi lb. fresh pig tads
3 limes
2 tablespoons salt
2 cucumbers, thinly sliced
3 medium-size onions, thinly sliced
1 hot green pepper or chdi pepper, cut in half (seeds removed)
Have butcher cut pig feet and pig tads in small pieces. Wash
them wed in cold water and remove any fine hairs. Place meat in
large saucepot, add water to cover (approx. 8 cups). Bod covered
for 2 hours or untd meat is tender. Drain off water, reserving V 2
cut. Squeeze juice from the limes, addsliced cucumbers, sliced
onions and hot pepper to cup drained off water and stir. Pour
sauce over meat and let marinate for 2 hours. Remove pepper
before serving. Serves 4 to 6.

anticipating the sound of the
ball ripping through the nets
shout in unison, “Whoo-oop!”
They are rarely dissappointed.
He almost never misses. And
he leaves them howling with
his twirling lay-ups that
seemingly can’t go in, but,
somehow do.
Cummings, a 22 year old

senior, gives two reasons for
sudden development as an
offensive standout. Having
moved from center to forward
(1) “I handle the ball more,
and (2) I shoot more.”
Explaining the switch from
center to forward, he said, “I
discussed it with Coach
(Ernest) Tolbert and he made
the change.”
When Paine played
Morehouse in Atlanta, he
was-as usual-impressive. A few
days later Coach Tolbert
received a letter from the
professional Atlanta Hawks
saying they had been watching
his performance and would
continue to do so. They are
also reportedly interested in
Paige.
Cummings is a transfer
student, from Fort Valley
State, where he didn’t make
the team.
Unsatisfied at Fort Valley,
he talked to his high school
coach who told him that Coach
Tolbert at Paine was looking
for ballplayers, and the
financial aid was pretty good.
Cummings says that he has
been “very satisfied with
Paine”. And Paine is very
satisfied with him, especially
Coach Tolbert.
