Fish is a favorite dish. Whether you like it plain or fancy, fish is
highly nutritious and can be enjoyed in a variety of tasty and
interesting ways. These recipes should fit easily into your
collection.
HERB BROILED FISH STEAKS
4 6-ounce halibut, salmon, cod or swordfish steaks
1/3 cup melted butter
1 tablespoon grated onion
3 tablespoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon marjoram
1 tablespoon chives
2 tablespoon chopped parsley
Preheat broiler. Grease broiler pan. Prepare Herb Sauce by
blending all ingredients in small bowl. Spread half the mixture on
fish steaks. Broil 5 to 6 inches from heat for 6 minutes. Turn
steaks; sprea with remaining sauce. Broil for 8 minutes longer, or
until fish flakes easily. Serves 4.
BAKED RED SNAPPER IN WINE SAUCE
4-pound red snapper
Vi cup olive oil
& cup lemon juice
2 carrots, sliced
2 medium onions, sliced
Small bunch parsley
2 bay leaves
3 cloves garlic
2 teaspoons salt
‘Ateaspoon peppercorns
1/3 cup butter
2 cups dry white wine
Dash of cayenne
Lemon wedges, parsley sprigs, and capers (optional)
Olives Flavor Chili Con Carne
There are many versions of chili con carne. But if you
haven’t tried one flavored with the savory, salty tang of
pimiento-stuffed olives you’re missing a real treat. Thin
chili or thick, extra hot chili or chili with rice, with beans
or with macaroni, all varieties taste and look better with
colorful Spanish green olives.
These days when a large file of economy dishes is a
must, a new version of chili is a welcome addition. This
recipe, like most chili, simmers for a while to blend the
flavors and tastes even better the next day.
OLIVE CHILI CON CARNE
(Makes 6 servings)
'A pound sliced bacon, diced 1 tablespoon brown sugar
2 pounds lean beef round, 2 to 3 tablespoons chili
cut in M-inch cubes powder
1 cup chopped onions 1 CU P small pimiento-
1 clove garlic, minced stuffed olives
2 cans (15 ounces each) Cooked kidney or pinto
tomato sauce beans or rice
1 tablespoon cider vinegar
Fry bacon in large pot until crisp and brown; drain on
paper toweling. Pour off all but about 3 tablespoons bacon
drippings from pot. Brown meat, about 1/3 at a time, in
drippings; set aside. Fry onion and garlic in same pot,
stirring occasionally.
Add browned beef cubes, tomato sauce, vinegar, sugar
and chili powder to pot. Cover and simmer 2/2 hours or
until meat is tender, stirring occasionally. Add bacon and
olives to pot about 15 minutes before end of cooking
period. Serve the chili with cooked beans or rice.

Clean and scale red snapper. Place in shallow pan (not metal.
Pour oil and lemon juice over fish, top with carrots, onion,s
parsley, salt and peppercorns. Marinate for 30 minutes. Preheat
oven to 350° F. Remove fish from marinade and place in greased
roasting pan. Reserve marinade. Dot fish with butter, add wine.
Bake in preheated oven for 45 minutes, or until fish flakes easily.
Baste frequently with wine. When done, place fish on serving
dish; keep in warm place. Add marinade to wine in roasting pan
and simmer for 10 minutes. Correct seasoning; add cayenne.
Strain; pour over fish. Garnish with lemon wedges, parsley sprigs
and capers, if desired. Serves 8.
SHRIMP JAMBALAYA
1 clove garlic, chopped, or 1 tablespoon chopped onion
>/ 2 pound cleaned shrimp (or 1 package, 7 oz frozen shrimp, thawed)
1 tablespoon of salad oil
1 can (1 lb.) tomatoes
1 package (9 oz.) Birds Eye French Green Beans w/Sauteed
Mushrooms
2/3 cup water
1 teaspoon salt
1/8 teaspoon thyme
1/8 teaspoon pepper
2 dashes Tabasco sauce
2/3 cup Minute Rice
Saute garlic and shrimp in oil in skillet just until shrimp turn
pink. Add remaining ingredients, except rice. Bring to a boil,
separating vegetables. Reduce heat and simmer 3 minutes. Stir in I
rice. Cover and simmer 10 minutes longer. Makes about 5 cups or
4 servings.
