I Give Zest To A Brown Salad
| Rice is a staple of the cuisine of India, as
li many countries. Before an Indian girl is
Budged to have grown into a woman, in
■act, she is expected to know how to pre
late rice at least 15 different ways! In the
Ivestern Hemisphere we’re not quite so
■emanding; but still, the best cooks here
Inow that rice is an ideal food for its
lersatility, meat-stretching economy and
;ood eating.
The best way to serve rice during the
varmer months, just around the corner, is
hilled in a rice salad. Since many of us are
hinking “nutrition” these days, try some
lelicious brown rice salads, which offer
idded taste and texture as well as high
mtrient content.
Bombay Brown Rice Salad

Parboiled Brown Rice
(Brands Suggested by The MONITOR)
E 2 /j cups water
n cup UNCLE BEN’S® Parboiled
Brown Rice
1 Teaspoon Morton salt
I teaspoon McCormick curry powder
1 package (10 ounces) Birdseye frozen
peas, thawed
•4 cup chopped Planters salted peanuts
2 cups diced cooked chicken
2 tablespoons sliced green onions with
tops
'/’ cup Kraft Mayonnaise or salad
dressing
!4 cup unflavored Dannon yogurt
2 tablespoons Kraft orange marmalade
1 teaspoon Dijon-style mustard
1 orange (optional)
Bring water to boil in medium saucepan.
Add rice, 1 teaspoon of the salt and the
curry powder. Reduce heat. Cover tightly
and cook over low heat until all water is
absorbed, about 50 minutes. Spoon rice
into large bowl. Reserve !4 cup of the peas
and 2 tablespoons of the peanuts for gar
nish. Stir remaining peas and peanuts, the
chicken and green onions into rice. Com
bine mayonnaise, yogurt, marmalade,
mustard and the remaining 1 teaspoon salt;
stir into rice mixture. Cover and refrigerate
until chilled, at least 2 hours. Garnish with
reserved peas, peanuts and orange slices.
Makes 6 servings.
Note: One cup mayonnaise or yogurt can be
substituted for the mixture of mayonnaise
and yogurt, if desired.

Parboiled Brown Rice

2 2 /> cups water
1 cup UNCLE BEN’S® Parboiled
Brown Rice
2 teaspoons Morton salt
1 package (10-ounces) Birdseye frozen
chopped broccoli, thawed and
drained
8 ounces fresh mushrooms, sliced
1 cup julienne strips of cooked ham
(about I x !4 x 14 inches)
1 cup julienne strips of Kraft Swiss
Cheese (about 1 x !4 x !4 inches)
!4 cup Kraft mayonnaise or salad
dressing
2 tablespoons Heinz vinegar
1 tablespoon Dijon style mustard
!4 teaspoon Domino sugar
*4 teaspoon McCormick black pepper
Bring water to a boil in medium saucepan.
Add rice and 1 teaspoon of the salt. Reduce
heat. Cover tightly and cook over low heat
until all water is absorbed, about 50 min
utes. Spoon rice into large bowl. Add broc
coli, mushrooms, ham and cheese. Place
remaining ingredients and 1 teaspoon salt in
blender container or jar with tight-fitting
lid; cover and blend. Stir mayonnaise mix
ture into rice; cover and refrigerate until
chilled, at least two hours. Makes 6 to 8
servings.
