In today’s black American
home, cooking is no longer the
responsibility of one person.
Because of busy and varied
scheduled, usually every
member of the family at some
time or another has to prepare
personal meals or meals for
other members of the family.
The Kitchen Beat is designed
to meet some needs of the
various cooks in the modern
black family.
LOVE IN THE
AFTERNOON
There is hardly anything
/ more satisfying to a child than
coming home from school and
finding a delicious homemade
snack. It says, “I love you!” -
in capital letters.
These tasty Orange-Flavored
Coconut Chews will find a host
of eager customers. Tang
orange flavor instant breakfast
drink provides a pleasantly tart
flavor, and coconut adds to the
chewiness. These bars are easy
to make and store well in a
covered container.
A good accompaniment for
these bar cookies is a large
s' pitcher of orange-flavored
I instant breakfast drink that
supplies Vitamin C along with
I good, refreshing flavor. For a
? change of pace, substitute
I chilled ginger ale in place of
I some of the water when mixing
! the drink.

COCONUT CHEWS

| 1 cup all-purpose Gold
Medal flour
I 1 teaspoon double-acting
Calumet baking powder
5 Vs cup Land O’Lakes butter
I or margarine
| 1 cup Domino sugar
I 2 tablespoons Tang
I orange-flavored instant
I breakfast drink
| 1 egg
2 tablespoons water
I 11/3 cups (about) Baker’s
| Angel Flake flaked coconut
ji Mix flour with baking
powder and salt. Cream butter.
I Combine sugar and instant
breakfast drink; gradually
I blend into butter. Add egg and
f water and beat until smooth.
J Fold in flour mixture; stir in
cccnut. Spread batter in
greased 8-inch square pan.
Bake at 350 for 35 to 40
j minutes, or until cake begins to
pull away from sides of pan.
I Cool in pan. Cut into bars.
| Makes about 20 bars.

I many as 50 southern cities,
| diedin 1934.

Butter or Margarine
IVs cups Nabisco grahafl
cracker crumbs
Vs cup Domino sugar
2 (8 ounce) package®
Philadelphia Brand crearfl
cheese, softened
1 (14 ounce) can Eaglfl
Brand Sweetened Condense!
Milk
3 egg yolks
Vs cup ReaLemofl
Reconstituted Lemon Juice
3 egg whites
% teaspoon Morton salt
% cup Hershey’s chocolatfl
syrup
(Whipped cream anfl
chocolate syrup for granishfl
optional)
Preheat oven to 300. Isl
small saucepan, melt buttefl
stir in crumbs and sugar. Pa
evenly on bottom of 9-incl
spring-form pan or 9x9-incl
baking pan; set aside. In largi
bowl, beat cream cheese unti
light and fluffy. Gradually ad(
sweetened condensed milk, eg)
yolks, and lemon juice, beatin;
until smooth. Beat egg white
with salt until stiff but not dry
fold into sweetened condenser
milk mixture. Blend 1 cu{
filling mixture with chocolatr
syrup; pour remainder ir
prepared pan. Cut througl
filling to marble. Top evenlj
with heaping table spoonfuls o
chocolate mixture. Bake 55 t<
60 minutes or until toothpick
inserted 1 inch from edf.l

Holte concluded that the
Black Press could be the
instrument to effectively
provide the development of
improved understanding a
more equitable partnership
between the industrialized
countries and the third and
fourth world countries.
