(NCBM) at its 9th An
nual Convention in New
Orleans from April 27-30
at the Hilton Hotel.

ZETA XI OMEGA CHAPTER of Alpha Kappa Alpha Sorority Inc. recently initiated six
members into the chapter.
Following the ceremony led by Basileus Ella Jones, a banquet was held to welcome the
new sorors.
The probation period was under the direction of Sorors: Willie Mae Ingram, Carol Bab
cock, Myrtis Bennett, Eliza Cave, Beatrice Calhoun, Betty Butler, Hattie Canada and
Beverly Johnson.

‘Light' lasagne
makes chic dish
Nothing suits the light-eating trend like pasta. It’s
high in nutrition, low in fat and sodium and con
venient in many sizes and shapes. Since lasagne has
become increasingly popular, we offer here two new
versions of lasange rolls...each with a calorie count of
500 or less in an entree serving. One version is stuffed
with a tuna mixture, the other with cheese and
vegetables. The lasagne rolls are stood upright in a
casserole and baked to saucy goodness in a half hour.
You, too, can serve chic menus with the food which
has become America’s number one food craze --
pasta! Remember, it’s not really fattening—there are
only 210 calories in two ounces of uncooked macaroni
products...22o in egg noodles. These “light”
lasagne rolls make a chic dish. Enjoy!
Tuna Stuffed Lasagne Rolls
8 lasagne
1 tablespoon salt
3 quarts boiling water
1 can (6/2 to 7 oz.) tuna, drained and flaked
l-!/j cups part skim ricotta cheese
\-Vi cups chopped fresh spinach, stems removed
4 cups chopped ripe tomatoes
1 clove garlic, minced
3 A teaspoon basil
1/2 teaspoon salt
Dash pepper
Gradually add lasagne and 1 tablespoon salt to
rapidly boiling water so that water continues to boil.
Cook uncovered, stirring occasionally, until tender.
Drain in colander.
While lasagne is cooking, mix together tuna and

cheese. Fold in spinach. Set aside.
In medium saucepan, combine tomatoes, garlic,
basil, !/z teaspoon salt and pepper. Cover and cook
over medium heat about 10 minutes, stirring once or
twice. Pour about 1 cup of sauce into a 2-quart
casserole.
Place about !6 cup tuna mixture on each lasagne.
Spread into even layer leaving about 1-inch plain at
each end of lasagne. Roll up and stand upright side up
in casserole. Continue with remaining lasagne until
casserole is full. Spoon remaining sauce over and
around lasagne. Cover and bake in a 375 degree oven
25 to 30 minutes or until piping hot. Make 4 servings,
approximately 500 calories per serving.
Cheese Stuffed Lasagne Rolls
8 lasagne
1 tablespoon salt
3 quarts boiling water
4 cups chopped ripe tomatoes
X A cup chopped parsley
1 large clove garlic, minced
1/8 teaspoon marjoram
1/8 teaspoon salt
1/8 teaspoon pepper
2 cups low fat cottage cheese (1 %)
l-!4 cups diced fresh mushrooms
l A cup finely chopped scallions
Dash salt
Dash pepper
Gradually add lasagne and 1 tablespoon salt to
rapidly boiling water so that water continues to boil.
Cook uncovered, stirring occasionally, until tender.
Drain in colander.
While lasagne is cooking, combine tomatoes, parj
sley, garlic, marjoram, 1/8 teaspoon sa’t and pepper
in large skillet. Cover and cook over low heat about*
20 minutes or until very juicy. Remove from heat.
In a medium bowl, combine cottage cheesej
mushrooms, scallions and a dash each of salt and
pepper. Stir until blended. Spread mixture evenly ovei
each lasagne with !6-inch from each end. Place 1 cuj
tomato sauce in bottom of greased 2-quart casserole
Set lasagne rolls upright in casserole. Pour remaining
tomato sauce over and around rolls. Cover and baki I
in a 375 degree oven for 25 minutes or until heated
through. Makes 4 servings, approximately 34®
calories per serving.
